Need recipe help

Hi. This is a basic baked egg recipe that I like to use, but I'd like to find a substitute for the flour. You can add any veggies/meats that you like as well.
I was wondering about carbolose or even almond flour. I have almond flour on hand. Any ideas?

1/2 C butter
10 eggs
1/2 C flour
1 t baking powder
2 C cottage cheese
1 C shredded cheese

Melt butter. Beat eggs and add flour and baking powder. Add butter, cottage cheese, and shredded cheese. Stir and pour into 9x13 baking dish. Bake at 400 for 15 minutes. Lower temp to 250 and bake additional 35 minutes. Let stand 5 minutes before cutting into squares.

Does the flour helps firm up everything? With that many eggs I might try 2-3tablespoons of coconut flour. Not sure that almond flour would give the desired effect in this recipe.

That's what I was wondering about the almond flour too. The flour almost gives it a slight bread/spongey texture. I've not used coconut flour before. Is it easy to find? I've considered just skipping the flour. So if I skip flour, should I skip baking powder too? What about low carb baking mixes?

ground flax meal? LSA? A mix of coconut, almond and something else?

I've been experimenting with ratios of different flours to see if I can come up with something that 'works' like standard flour.

Some flax meal should work great...with eggs and baking powder flax gives a bready texture. I have found if you let it sit a a few minutes before baking it gives the baking powder time to act on ingredients and do its magic...helps it get fluffy. With 10 eggs I think I would sub 1/4 to 1/3 cup of flax meal to flour but you could go for a full half cup.

You could probably sub a baking mix if you use one. I would use the fantastic flour mix (BTF) but I would use less because of all the fiber and because the oat fiber and coconut flour soak up more liquids.
