I wondered if Spelt flour is considered a low carb option?

Do a search on the net for... nutrition data. You can look up anything on that site and get the nutrition info. A cup of spelt (not spelt flour) is 105 net carbs.

Food Item: Spelt Flour
Food Quantity: 1/2 cup
Carbs: 48g
Dietary Fiber: 10g
Net Carbs: 38g

So, no. It's not a low carb option.

Some of us are experimenting with Lupin Flour, which IS a low carb option. I just baked a loaf of bread this week that has <1 net carb per slice. It's in this discussion, at the end of the thread: http://www.lowcarbfriends.com/bbs/lo...pin-flour.html

CAUTION: Do not consume lupin flour if you have a peanut allergy. Lupin seeds from which the flour is ground, are classed as legumes and allergic-type reactions in peanut- sensitive people have been reported, from what I'm reading.

Lupin Flour
I've been following your posts on the Lupin Flour. Would you say that the bread you made from the Lupin tastes better than the BTF bread?
