Chicken-Eggplant Parmegiana


This Italian dinner was created with leftover cooked chicken breast meat I had in the refrigerator and a small amount of homemade spaghetti sauce along with a dab of commercial Luccini no-sugar spaghetti sauce I wanted to use up. I bought a beautiful eggplant yesterday and some mushrooms, so I created a quick Parmegiana casserole. This delicious dish is suitable for all phases of Atkins and Primal followers that eat occasional cheese. This meal would not be suitable for Paleo diners due to the cheese.

INGREDIENTS:

8 oz. cooked chicken meat, in bite size pieces
2 T. olive oil
6 oz. mushrooms, sliced
5 oz. eggplant, sliced 1/4″ thick (I do not peel)
¼ c. jarred Luccini spaghetti sauce (has no added sugar)
3/4 c. homemade spaghetti sauce [you could use all homemade or all Luccini]
6 oz. Mozzarella cheese, grated
½ c. grated Parmesan cheese
½ tsp. dried oregano (or 1 tsp. fresh, chopped)
¼ tsp. dried basil (or 1 tsp. fresh, chopped)
¼ tsp. dried rosemary (or ½ tsp. fresh, chopped

DIRECTIONS: Preheat oven to 400º. Use a small amount of the oil to grease your casserole dish and a small baking sheet. Place eggplant on baking sheet and bake at 400º for about 15 minutes, turning once during this pre-cooking. Remove from oven and lower temperature to 350º.

In a non-stick skillet, saute the mushroom slices in the rest of the olive oil. Place eggplant in a single layer on the bottom of your greased casserole dish. Top with the shredded chicken meat. Spoon half the spaghetti sauce over the meat. Sprinkle on half the Parmesan and half the mozzarella cheese. Sprinkle with half the spices. Spoon on the remainder of the sauce. Sprinkle on the rest of the two cheeses and the last of the spices. Top with the sauteed mushroom and pop into your 350º oven for about 30-35 minutes or until cheese is melted and the casserole is hot hot in the center. Serve with your favorite salad or green vegetable and some garlic bread made with low-carb bread.

427 calories
26.1 g fat
10.4 g carbs, 2.98 g fiber, 7.42 g NET CARBS
38 g protein
408 mg potassium, 27% sodium
11% RDA Vitamin A, 28% B6, 58% B12, 37% calcium, 25% copper, 16% iron, 12% magnesium, 64% niacin, 66% phosphorous, 39% riboflavin, 49% selenium, 12% thiamin and 31% zinc

This was really easy and really good, Tofu. It never ceases to amaze me what you can throw together with little dabs of leftovers. If I stand staring at what's on the refrigerator shelves a few minutes, it just "clicks" sometimes. If I'd have thought of it, I'd have added some dots of pesto sauce in a layer, too. Well, there's always next time.

I'm licking my screen, Peggy! That sounds a lot easier than what I made once. I "breaded" and fried slices of eggplant and put them on top of Chicken Parmesan. Here's the photo:

Yummy, they both look so good!! I love chicken and eggplant Parmesan, but never thought of putting them together!

Yours is definitely the classic way to do Parmegiana, LindaSue. Sure looks mouth-wateringly good in that pic. Breading would likely not do well on pre-cooked chicken however. This was a breast leftover from chicken and dumplings I just lifted out of the broth and shoved in the fridge, not knowing what I'd do with it. There weren't any of my gluc dumplings left (there never are).

OT, but LindaSue, is there something wrong on the LLVLC site? It's displaying all weird on me for a couple days, but no other site I go to has any display issues, so it's not my PC or browser. Displays weird whether I go in on Firefox or Internet Explorer. Are they changing software or something over there?

Weird in what way? I'm not seeing any difference. The only thing that has changed is that you have to use the Forum Jump button at the bottom of the page because the navigation has been removed down there. It's still at the top of the page though. Are you unable to post there?

When I go to the main page of the forums, I see this:
When I click SHARE YOUR JOURNEY, I see the listing of journals differently than it has ever displayed before. Have a look see at how I'm seeing it:

This wacko display (without all the blue in the background. Just a sea of white!) occurs whether I go in on FX or Internet Explorer. Not having such wacky display issues on any other website. This started a few days ago. Any thoughts? Could I have hit some key on my keyboard that somehow changes display preferences on that site only? Just doesn't make any sense. I just tested, and I can post a reply onto my journal.

It looks like you're in plain text view but I can't find a setting for that at the moment but I'm sure I've seen it somewhere. I'll let you know if I find it.

Thanks a bunch LindaSue. I really appreciate it. I'm having cataracts removed this month and the "sea of white" is almost blinding for me until I get these eyes corrected surgically.

Would you believe that I've done it to myself now? I changed some settings in my User CP and it caused everything to look like your screenshots. Now I can't get it back to normal no matter what I try.

Oh, dear. Well at least you narrowed it to something on the User CP. Do you remember what things you were tinkering with on the User CP? I looked at Edit Options and there are some display items down on the right, but no matter which ones I toggle off or change from the Defaults they were on, nothing fixes this wonky screen appearance. Do you have direct access to Jimmy's technical support person(s) for some thoughts on what you and I might have done? This sure is driving me nuts. I have absolutely no recollection of accessing my User CP in the last week, and this just started happening recently. That's why I thought it was a site software issue, and the fact that I'm not having any such issues elsewhere on the forums/websites I frequent.

On the remote chance that anyone else is following this, I found out that the forum problem was caused by a hacker a few days ago. It doesn't show up until someone edits their user settings. Jimmy's tech guy has set up a temporary theme until he can sort out the problem.
