Interesting technique for making icecream!
 
I saw a technique using dry ice (not involving an icecream maker) on the Rachael Ray Show today. (Its on the show's website if you want to go see the clip)

Basically, the guy ground up dry ice (which you can actually purchase at many regular grocery stores) in a food processor.

Then he put his icecream base into the bowl set in an electric mixer. With the mixer running, he spooned the dry ice into the mixing bowl. Of course, the "smoke" from the dry ice goes everywhere and looks cool! But it ends up freezing the cream into a really beautiful soft serve looking texture. It also adds a little bit of whipped air into the ice cream.

Well, I'm pretty sure you aren't supposed to consume dry ice.
I think it can give your esophagus frostbite.

Hey, but what do I know...I'm just remembering you cannot touch that stuff with your skin at all. Maybe it dissolves?

You are right, but I don't think they were consuming it. I believe they put the ice cream mix in a separate bowl and set it in the mixing bowl, then spooned the dry ice around the outside of the ice cream bowl. :)

Got curious and watched the video...they DO spoon the dry ice directly into the ice cream mixture!!! I would not have thought you could eat this either! :stars:

Dry Ice is just the solid form of CO2. It's only dangerous in its solid form because of ice burns. Since it goes from solid to gas without turning to liquid, no CO2 winds up in the ice cream.

CO2 is used for carbonating beverages too - and one of the interesting ways you can carbonate home brewed beer is with dry ice! We haven't tried it yet but we might one of these days.

Yes they put the dry ice directly into the ice cream base as the mixing bowl was running (there is a video on Rachael Ray Shows website if you want to see them do it). The dry I've evaporates... While making cool puffs of smoke.... And in the process freezes the ice cream and adds a little bit of CO2 air to it as well. The dry ice is totally evaporated by the time you eat any ice cream.

Anyways, people are always asking how to make ice cream without an ice cream maker and this method appeared to produce a very nice soft serve texture. And dry ice is actually pretty readily available.
And yes, you wouldn't want to put dry ice in your mouth!!

I worked in a research lab to help pay my way through college... I used LOVE it when the chemicals and enzymes and stuff arrived packed in dry ice! PLAY TIME!

I first saw this done by Heston Blumenthal on one of his "In Search of Perfection" episodes. It's trippy indeed to watch...but evidently it makes wicked ice cream, super-fast. As Strawberry states above, there is no danger in this method in terms of consuming the ice cream. C02 is all around us!

We used to get it every Halloween to play with... and would always float a piece in the punch. Would be really fun to try the ice cream!
