Easter deviled eggs!
I found this on Pinterest! I think it would be an adorable low carb thing to bring to an Easter gathering!

Basically you hard boil your eggs as usual, then peel and separate the yolks from the whites.

The whites are dipped into standard Easter Egg dye (like you would normally use for dying the shells!).

Then mix the yolks with mayo, and whatever else you would normally put in your devilled eggs, and pipe into the colored shells!

Original blog was Foodjimoto, where I got this pic.

I was thinking of doing something like that but not with dyes. Thinking beet juice, blueberries.

Have you seen the one where they are made to look like little chicks breaking out of the shells. I'll see if I can find it again. It was cute but it did look very labor intensive.

beet juice, blueberries.
Wouldnt that give a specific flavor to the eggs?

I've seen the devilled egg peeps!

Photo pulled off a Google search, Blog is Tabletop Trends

Beet juice wouldn't be a bad combo with eggs.
