bread tastes stale

I tried rose elliots recipe and i find the bread has a stale taste to it, slightly sour, i tried a different recipe not using soya and the taste is a little better, but i wonder if any of you know what makes the stale taste - the wheat gluten powder, linseeds, bran, or soya flour. i tasted all of these raw before baking but couldn't find the culprit! I know its not almonds.

some of those things go rancid if not refrigerated properly; that is probably it. try sniffing each again, and if that doesn't work, perhaps you have a friend with a keener sense of smell? good luck

no, its not that, all the ingredients were freshly bought and stored properly.

It's probably the linseed. It can have a "grassy" taste that may be causing you to taste "stale".
Try changing the ratio and lowering the amount of linseed

I have discovered the cause! The recipe uses 3tbsp olive oil, and i was using extra virgin olive oil, - changed to rapeseed and alls good!
