Raw cashew butter bread

Tried this today. http://www.againstallgrain.com/2012/...paleo-and-scd/

It really is good. Anyway, it's higher carb, especially if you use honey in it. That said, it's been the best gf bread I've been able to make to date. It really comes close flavor wise.

I'm thinking of substituting BTF for the coconut flour to get a better rise and less tender mouth feel. Also, I'll sub stevia for the honey to keep the carb count as low as possible. (I just always like to try a recipe as written first to see if it really is as awesome as everyone says, then tweak to try for super awesomeness!)

I've made almond bread and peanut butter bread (I don't care for the latter at all, after 2 tries) and wasn't that crazy about either one. Plus, breads made with nut butters usually call for a full cup and that can get so darn expensive if you bake a loaf say once a week? Cashews, in particular, are pricey. I just stick to recipes with less expensive ingredients than nut butters. this one does look good, though.

Oh yes let us know Caren. I use raw cashews for my dairy free yogurt.
That bread looks great. Are they using 2 cups of butter. I'll have to look.
