I'll be at work so I don't have an Easter menu. But I am going to attempt to make Easter bun - A traditional sweet bread eaten with cheese from my culture during Easter. I am going to attempt to make a low carb version.

I will Esther. Its a traditional yeast bread but I am going to try to make a yeast version and non yeast version. I have seen non yeast high carb versions so I think it can be done that way. The challenging part I think will be the beer and the fruits. Its usually made with Guinness Stout and I have never seen a LC version of Guinness stout so I am wondering if LC beer will work. There's raisins and cherries in there too so not too sure what to do about them yet. I was thinking about leaving them out. But I will post my results when I make it next week.

DH has requested a ham. We always do a Ham for Easter, Turkey for Thanksgiving, Prime Rib for Christmas.....you get the jist.

He really enjoys scalloped potatoes with it but Im looking for something lower in carbs. I usually do a mix of yukon gold and sweet potatoes, I wonder if I could do turnips and sweet potatoes? That should cut the carbs a bit. I dont mind having a little sweet potato occasionally. Hmmmm.....

Some kind of green veggie too! Either Asparagus or fresh green beans. I have been getting some excellent brussel sprouts from the farmers market though so maybe those intead!

Andi, I have a recipe (and I think it's posted on here someplace) for sweet potato/butternut squash gratin that is SO good! It gets requested frequently from all sides of the family. Let me know if you want it. Also, the scalloped turnips recipe that is on this board is awesome and even my turnip-hating Dad loved it - but refused to believe it was turnips!

We're having rotisseried prime rib, ovenroasted root veggies, some kind of green veggie as yet to be determined, and LC strawberry shortcakes.

I'm doing ham, my Smoked Gouda Cauliflower and something green......maybe asparagus or broccoli. Will probably do fresh berries on low-carb vanilla ice cream for dessert.

Glazed ham, my 3 cheese baked cauliflower, asparagus with bacon, lemon bundt cake with lemon whipped cream and blueberries for dessert (all low carb, of course).
