Anyone eat green bananas?
 
Any truth to the idea that green bananas are less carby?
If so, anyone know the actual carb content of 1 green banana?

I just read about a new gluten free flour made from green banana flour. How interesting.

I googled it and it looks like the calories are the same, but there is more sugar in the ripe ones. same carbs in the green, just a different molecule of carb.

Thanks for the response. I am really interested in the effects of resistant starch in green bananas. Not sure how it all works though.

Green Banana Fries!!! LOL

I took my BS before eating them, I will report back if it spiked after. I did eat all of these, made from a medium-large banana so I'm taking that into consideration. They taste EXACTLY like French fries!! Mine didn't come out really crunchy but were crispy with some crunch.

They're really yummy!!!

The results are in and they're not good!! My BS was at 115 before eating the fries and 2 hrs later its at 192. Maybe it would have been fine if I hadn't eaten so many but it didn't really seem like much and it wouldn't even be worth making for such a small portion.

Use caution with the green bananas!!

There's a fair amount of starch in green bananas, I believe. That starch changes to sugar as the bananas ripen. Don't see how they'd be much less carby than ripe.

I'm sure those fries were yummy. Funny thing is, I ate fried green bananas as a kid all the time. In Jamaican culture, green bananas are used in similar ways that Americans use potatoes. Instead of potato chips, its green banana chips that are popular. Its often boiled and eaten with protein or other cooked veggies.

Whenever I get to my final goal,( whenever or whatever that is, it changes all the time LOL) I may have a green banana occasionally especially since its cultural thing for me.
