I like to roast nuts in my cast iron skillet rather than the oven. Less of a chance of them getting burned that way.
I melt a little butter on med or med high, then add a single layer of nuts and just keep them moving around the skillet until they start to brown. That's the tricky part, you need to get them lightly brown in the skillet but no darker because they will continue to brown after you take them off the heat and they burn easily. Then I sprinkle them with sea salt and that's it!
Try it with a few nuts at first, then go for it!
