Low Carb Maryland Crab Soup Recipe

Anybody have a recipe for low carb maryland crab soup? I'm in Nashville, but have access to some blue crabs. I remember my mom and grandmom making this, but it wasn't low carb. I'd like to try and make a version for me. Thanks.

Yeah, sadly my mom and grandmother were old school and didn't really follow recipes. This is from the Old Bay website.

Ingredients

1 can (28 ounces) whole tomatoes, cut into small pieces
3 cups water
2 cups beef broth
1 cup lima beans, frozen
1 cup baby carrots, sliced
1 cup yellow sweet corn, frozen
2 tablespoons McCormick® Chopped Onions
1 tablespoon OLD BAY® Seasoning
1 pound crabmeat

I know they put potatoes in theirs as well. They have both passed.

I'm assuming I just need to find a veggie replacement. I'm ok with the carrots, but not the corn, beans, and potatoes. I can use Cali, but am afraid that will cook down and break up to much. Maybe I'll look for a LC Clam Chowder and see what they would do. I just thought someone on here might have a recipe. Thanks.

I'd add diced zucchini with about 15 minutes to simmer and it would be similar in texture to corn or beans.

This is a lot like one I make.

I would make your soup base then add veggie according to their cooking times.

tomatos
celery
onions
( maybe dreamfields macroni for the potatoes
or chayote squash for the potatoes
fresh chopped thyme
fresh chopped italian parsley
garlic chopped
frozen cauliflower ( cooks quickly )
frozen green beans

they also have black soy beans

Maybe hearts of palm would work, too. Kind of a potato-like texture in soups.

The classic mix of veggies for a soup is celery, carrots, and onion... I would use that plus maybe some green beans.

I ended up using multi-colored carrots I found at publix...some zucs..and squash..and snow pea pods. Turned out pretty good.
