Peanut Butter Pie with Chocolate Candy Crust

I just made this..very good and very rich.

I used a 6 inch pie pan and it came out just right. For a large pie pan..say 10 inch, you would have to double the recipe.


Crust:

One 85 percent Lindt bar
1/2 stick of buttert
touch of splenda all melted in a 2 cup pyrex dish.

Stir, stir until melted..Then pour the liquid chocolate into the bottom of a Pammed small pie pan and freeze while making the filling..

Filling: One 8 ounce cream cheese, softened
1/2 cup of peanut butter
1 cup of powdered erythritol
1/4 cup of cream mixed with 1 tsp of vanilla

Mix and stir until smooth. Pour into hardened chocolate crust and freeze until firm. Take it out a few minutes before serving and serve small pieces with whipped cream.

The crust is soo nommie as it is a candy bar..LOL..So, it is pretty stiff, so you have to use a very sharp knife. But, as the pie sits when you are eating it the crust does soften a bit.

Girls..I am all about easy, too.. You could also drizzle some SF chocolate on top of the whipped cream for some color.

I love the sound of this one, Carolyn. The crust could be softer if one used a bit of light-tasting olive oil or coconut oil in place of some of the butter, I imagine. You are making me hungry!
