My Irish Soda Bread



3 c. Jen's Gluten Free Bake Mix
1 c. Carbalose flour
2 tbs. Vital Wheat Gluten
1/4 Sugar Sub Blend (1/2 Splenda 1/2 Erythritol)
1 Rounded Tsp. Baking Soda
1 Tsp. kosher salt
1/4 c. cold butter cut 1/2" dice
1 3/4 c. buttermilk (shake it well)
1 tsp. vanilla extract (opt.)
1 Extra large egg, beaten

Non Traditional Extras:
*1/4 c. raisins (dust with flour)
1 tsp. grated orange rind

Preheat oven to 375 degreesF. Lined my baking sheet
with foil and then with parchment paper.

Combine flour, salt, baking soda in bowl of electric mixer.
Turn on gently and let the paddle mix the dry ingredient up.
Add the butter until well mixed into the dry.

Beat egg and buttermilk, vanilla if using and beat with a fork.
Combine the raisins with flour. Now add wet into the dry
ingredients. Mix just until everything is incorporated. Does
not take long.

Place dough on floured board and knead LIGHTLY and draw
up into a ball. Place the loaf on your prepared baking sheet.
With a serrated knife place an X lightly into the dough.

Bake for about 55 minutes. Cake tester must come clean,
and bread has hollow sound when it is tapped.

Serve warm with butter and marmalade. Or toasted is
wonderful too.

*Grated orange peel is very good in this loaf.

Darn, have everything but the oat flour! Oh well. Would have been good with my corned beef dinner tomorrow.
