Bread for French Toast
 
Having company for Breakfast after church on Easter. Would like a Low Carb (GF not required) that would make tasty French toast for Low Carbers and Non LC. I have Coconut Flour, Almond Flour, Carbquik, VWG, Protein Powder, and Spelt Flour. Thinking some combination would work, but I'm nervous. Welcome suggestions.

Your Lighter Side has a recipe for Stuffed French Toast, but she uses low carb bread from the store.

Or you could use eggplant. I haven't tried it but they say it is awesome. Not sure how you do it.

I made the mock danish and added a lil extra cream cheese a tbs of flax, cinnamon,vanilla,1/2 tsp baking powder and sweetener...microwaved for 1 min 30 sec and then chopped it up and topped it with a lil more cinnamon,butter and erythritol...put in a dish and into toaster oven to top brown...this was a single serving of the recipe, it tasted like the overnight french toast recipes on pinterest...I didn't need to add syrup but a guest could if they wanted...I really can't believe how good this tasted...I almost prefer it to my almond meal muffins.
I think the key was the flax and baking powder...gave it a bread texture.

You can use a LC Pound cake, but it is quite rich and buttery -- maybe too much for some tastes.

I like to use waffles -- we call them "Fwaffles" -- a favorite with both my kids and my husband.

I would probably take the low-stress route, and get a good low carb bread from the store, like Ezekial bread.

If you have the Alvarado Street Bakery bread around, their flax bread is around 6 or 6.5 carbs/slice.

i make a one minute muffin and make in the microwave like usual then i slice it then fry it like french toast and top with butter and sf syrup----i used pumpkin and sometimes i put in a little sourcream----there is a lot of recipes out there for the OMM or you could make up a batch of sweet oopsie rolls and dunk in the egg mixture then fry, both are good, but a little work----

forgot to say that i do dip the OMM in a egg mixture also mixed with a little cinnamon and milk then fry---yummy
