Baking with Coconut flour

I found a few recipes using coconut flour. Can't wait to try them. Does anyone else here use coconut flour for anything? The first recipe I want to try is coconut flour pumpkin bread YUM!

I've used coconut flour combined with almond flour to make LC bread for sandwiches.

I cut it into 16 small squares and used a cocoa & coconut oil glaze rather than the frosting in the recipe.

I only used 2 tbsp of sf honey and added splenda to sweeten it.

I made biscuits and gravy last night using coconut flour (in both the biscuits and to thicken the gravy) - it was delish!

Yaz- you are the queen! I don't know how I missed the cake the first time around. what really appeals to me about it is that it doesn't have any almond flour in it.

Sorry to post and run! I make these every other week and have plenty to get through a couple of work weeks (unless you eat a sandwich daily).
The rolls have a nice flavor (reminds me of a multi-grain flavor) and the texture isn't quite as dense as some of the grainless breads I've tried using nut flours. They aren't low calorie (nut flours), but the carb count isn't bad when you really want a sandwich.

Low Carb Sandwich Rolls
(Makes 6 servings)

1 cup blanched almond flour
1/2 cup coconut flour
5 Tbsp psyllium husk powder (no substitutes)
1 tsp xanthan gum (optional, but the rolls are less crumbly with it)
1 Tbsp chia seed, ground
2 packets stevia
2 tsp baking powder
1 tsp salt
3 egg whites
3/4 cup BOILING water


Directions:
IMPORTANT: You want to get the dough into the oven as soon as possible so that it rises properly.

Preheat the oven to 350 degrees F. In a medium sized bowl, combine the dry ingredients and mix until well combined. Add in the eggs and mix until you have a thick dough. Add boiling water into the bowl. Mix until everything is combined and the dough firms up. DO NOT OVERWORK THE DOUGH.

Quickly form into 6 rounds/discs (the dough should rise about 2-3 times) or one large loaf and place onto a greased baking sheet.
Bake for 65 minutes (50 minutes for smaller shapes like buns). Remove them from the oven and allow the bread cool completely. Cut open with a serrated knife.

Store bread in refrigerator (or freezer for large batches).

If you get a hollow bread, try lowering the oven temperature to 300 degrees F. It will rise less (maybe 2X instead of 3X at 350 degrees) but it will be less likely to get an air bubble.

Calories: 181
Protein: 8.3g
Fat: 11.3g
Total Carbs: 13.9g
Dietary Fiber: 8.8g
Net Carbs: 5.1g

When I was researching different things to give my almond flour recipes a more breadlike texture, I found this. I don't mind xanthan gum, but if you don't care for it, you can use this recipe as a substitute:

This seed mixture was created to take the place of xanthan gum and guar gum.

Ingredients
• 20 grams golden flax seeds
• 10 grams chia seeds
• 5 grams psyllium seed husk


Instructions
1. Grind in a coffee grinder until it has a flour-like texture.
2. Store in the freezer and use as needed.

2 tsp (~10 grams) of this powder stand in well for ˝ teaspoon of xanthan.

It really is a fantastic cake and so simple! What I really liked about it was that is wasn't dry like many of the coconut flour recipes I've tried.

The first day it was VERY moist due to the orange juice but it "dried" out a bit afterwards but stayed moist the rest of the week in the fridge.
