Caramelized Onions a la Sous Vide

I'm using Emily's method for making caramelized onions in the Sous Vide. Easy peasy!

I used about 5 onions which I cut in half and sliced thin. Put them in the pan with a touch of oil and salt. Put them on low and put a top on them until they started to cook. The idea is to cook all the gas and water out of them so the gas won't expand the vacuum sealed bag and bust it. You just cook them until the water evaporates then bag them and put them in the SV.

Here they are getting started, it's a deep frying pan and it's full of onions.

Thanks Charski! It's been fun experimenting with this.

Here's a pic to show how much the onions reduced. They sure have a lot of water in them! I started out with a deep frying pan brimming over with sliced onions and ended up with this piddly little amount.



Here they are in a bowl chilling out in an ice bath to cool off before bagging. It's hard to bag hot food.



Next step, it the bag they go...

Onions all cooled off and sealed in a vacuum bag.



They are now in the SV with their friend, garlic confit. Onions should be ready about 7:00 pm. Then they'll go in a cold bath then into the fridge until I make French Onion Soup this week.

Voila! The finished product. It couldn't have been easier.

Beautifully caramelized, just compare to the picture above.

I LOVE caramelized onions. I don't have a sous vide, but have been making them in my crockpot since I found a few pins on Pinterest.

Yes! I bet it's pretty much the same thing. I just don't have a crock pot. Well, I do but I can't find it.

There's no recipe, it's easy peasy.

Slice onions, fill up crockpot and put it on low for 8 hours or until they are caramelized enough. I like to put it on high for a few hours at the end to reduce the liquid.
