Garlic Confit a la Sous Vide

Making Garlic Confit in the Sous Vide Supreme today. It's whole garlic cloves covered in oil and cooked until the garlic is soft.

Garlic in oil waiting for the Sous Vide machine to heat to 185 degrees. I'm cooking in in the jar so I'm adding 30 minutes to the time before I check for the garlic to be soft.

LOL! It's kinda hard to give a blow by blow of this one since it's put the garlic in a jar, cover with oil (I used a mix of canola and something else) and cook sous vide at 185 for about 90 minutes or until garlic is soft, then take it out, chill in ice water, put a top on and put in the fridge. Done.

I'll show some pictures with the garlic confit spread on toast. How about that?

The garlic is still a little firm so I'm going to cook it a little longer. Man that garlic oil is mighty tasty!

Garlic confit is fini! The cloves are a little firm but smush easily. The oil they are in is amazingly good and garlicky. Super easy to do if you have some type of sous vide rig. Literally a few minutes, minus cooking, to get this garlicky goodness and you're not heating up your oven (and kitchen) roasting heads of garlic. Plus, you've got all this fantastic oil that costs a fortune if you buy it.

I am SO gonna do this - with a bag of the already-peeled cloves of garlic from Costco! So then does heating it and bringing the garlic to that temp negate the "raw garlic in oil" bad thing that can happen?

Yes! The garlic tastes like roasted garlic and the oil doesn't have that raw taste. I would eat this on a salad with some good vinegar.
