Arugula Salad with Olive Oil, Lemon and Parmesan
This salad is super easy to make Ė got the idea here
, but itís so easy you really donít need a recipe. If you like peppery, salty, and tangy, youíll like this. Arugula is slightly bitter, too. I pan seared a rib-eye steak (thank you, Alton Brown), and served it with this salad and a glass of red wine. Heavenly!
ARUGULA SALAD WITH OLIVE OIL, LEMON AND PARMESAN
Take a handful of baby arugula leaves
for each serving (I used Ĺ bag from Trader Joes for 3 servings) and place in salad bowl. Drizzle arugula with some extra virgin olive oil
(enough to coat leaves but not drown them) and toss to coat. Squeeze Ĺ lemon
over salad and toss again. Add shaved Parmesan cheese
(bigger chunks than shredded), salt and fresh ground pepper
to taste. Toss and serve immediately.
