Berry Smoothie
DH and I have been having these for dessert. We're both maintenance level, and we're now also counting WW points (for accountability) so here is our yummy treat.

1 cup unsweetened almond or coconut milk (we use the aseptic quart container kind, from Trader Joe's)
1 cup frozen berry blend (we like Costco's but TJ's has a good one too)
Sweetener of your choice to taste
Psyllium husk or chia seeds - optional, but adds fiber and thickens the smoothie

Put the almond or coconut milk in a blender, add the psyllium husk or chia seeds if using (about a tablespoon of either one seems to be about right) and blend til well mixed. Add the frozen berries, blend til smooth, then add your sweetener to taste, and blend again.

We split this between the two of us and it's less than one WW point! Also berries are on the lower carb list, so we enjoy them daily - so many good antioxidants and vitamins in them too!

Sounds good and right up DH's alley too! He loves berries. I might surprise him with one tomorrow night. :D

Thanks Charski!!! I do this everyday. I'm maintenace also. I use peaches sometimes to and cantolope with kool-aid , yogurt. Love it.

We have this every morning, minus the chia. It's nice with frozen raspberries and some cocoa powder. Dagoba organic is great. I also throw Jay Robb whey protein powder in there. I add ice to thicken it. Great way to start the day.

If you want to sneak in some veggies you can add baby spinach leaves and won't be able to taste them. I used to add cottage cheese to my smoothies for thickening and protein... Sounds weird but I really liked it.

Char - I finally got around to making this and its delish! I may try the tip of adding some greens and a TBS of CO and see if I cant make it a meal replacement! :yummy: I used the chia seeds and a packet of Truvia.
