GREAT vanilla scones - like Starbucks petite vanilla scones!
I'm so excited to report on a great low carb find - the plain low carb scone mix by LC Foods. The plain mix is available on the LC Foods site but not on Netrition yet.
I absolutely love Starbucks petite vanilla scones, and was looking for a way to make low carb ones. The almond flour recipes just weren't "scone-y" enough in texture, so I bought this mix from LC Foods.
I made half the package as directed, but added a whole scraped vanilla bean. (I made half the package, cause I didn't want so many scones sitting around getting stale)
For the glaze, I used LC Foods confectionary powder, available at Netrition, with another half of a vanilla bean scraped in.
The texture was close to real scones, and the flavor was excellent! You MUST use vanilla beans for the best result! (Easy to find them cheap and in bulk on eBay)
"Like Starbucks" Petite Vanilla bean Scones
Makes: 8 small scones
1/2 package (120 grams) LC Foods Plain Scone Mix
4 tablespoons butter, cold
1 egg white
1/8 cup sour cream
1 vanilla bean`
Preheat oven to 375 degrees.
Put a cookie sheet in the freezer to chill.
Cut the vanilla bean in half and scrape all the seeds into the sour cream
Put the scone mix in a food processor fitted with a metal blade, and add butter cut into chunks.
Process for 10 to 15 seconds in pulses, until mixture looks like coarse
crumbs. Transfer to a bowl.
Beat egg white with the sour cream until mixed.
Add egg/sour cream/vanilla bean mixture to the scone/butter mixture and fold gently until the mixture comes together into a rough ball (you might have to add a teaspoon or two of cream)
Roll out into a 1/4 " thick square. (use wax paper or parchment to avoid sticking)
Cut square into four squares, and cut each square in half. You will have 8 triangular scones.
Place on chilled baking sheet and put in top half of oven (I went one rack up from the center rack)
Bake 13 to 15 minutes until firm and the undersides are golden.
Let cool on a wire rack.
Make the glaze:
I used LC Foods Confectionary powder. (available at Netrition)
1/2 cup LC Foods Confectionary powder
1/2 vanilla bean
1 tablespoon heavy cream
2 teaspoons water
1 teaspoon soft butter
Mix cream, water, butter and scraped vanilla bean seeds until smooth.
Add confectionary powder and stir until glaze consistency. I had to add a little more heavy cream, but work fast, as this sets up super quickly!
Spoon glaze over cooled scones and quickly spread with a pastry brush. The glaze will harden as it stands.
The whole package makes 8 large scones; I got 8 small ones from half the package.
Each large scone has 1 net carb, according to the package (7 g total carbs, 6 g fiber) though my small ones come in at about .5 g of net carbs each.
