Biscuits and Gravy...

I want to make lc biscuits and gravy. Which biscuit recipe would you recommend for this? I don't use any grain products including oat or flour blends, or anything like carbalose.

without any grain derivitives, you won't get anything like a biscuit. I guess it just depends on how broadly you are willing to loosen your definition. you could definitely get a flax muffin type thing with gravy...

So, you don't think that any of the almond flour or coconut flour biscuits would work?
I'm open to ideas. I just can't do any grains or beans (so not even soy or chickpea flour).

Coconut flour and oat fiber seem to have the same amount of fiber in them. Unless there's another reason you can't eat it.

I've made Dottie's biscuit subbing half almond flour and it was very good. I only tried it with butter and jam but I would think it would make a good biscuit for gravy.

I replaced half the coconut flour with almond flour. I just wanted to lighten up the coconut flour taste.

Yup!

You might also try cutting in some butter to make it more biscuit like.

I made the Southern Style Biscuits and they worked really well for biscuits and gravy. I have some microwave egg muffin pans that I bought a while back from Walmart. I used those to make the biscuits and they worked perfectly. They were huge. Dh even loved them and was surprised to find out that I had made them (he thought I had bought them). I used this recipe for the sausage gravy and it was also great:

Sausage Gravy, Quick and Easy

Recipe By :

Amount Measure Ingredient -- Preparation Method

1 pound Sausage -- pork
8 oz Cream Cheese
1/3 cup cream -- heavy whipping cream
1/3 cup water
1/4 teaspoon salt -- seasoning

1 In a medium-sized frying pan over medium heat, cook and crumble the pork sausage. Drain off the excess fat.
2 Place the cream cheese into the pan and turn heat to medium-low. The cheese will melt as it is stirred. Add the remaining ingredients, stirring constantly to incorporate the liquid into the sausage/cheese mixture. Add additional water if necessary.
Servings: 8

I bet it would!!
I forgot to mention that I cut the biscuits in half and toasted them in a regular toaster before putting on the gravy. Mmmmmm. The biscuits really were big enough that 1/2 biscuit was plenty. I made two, so we'll have the other one tonight or tomorrow night.

I see you've now found what you were looking for. But if you decide to try again, I have Dr.Davis' recipe bookmarked.

Gravy:
2 tablespoons extra-virgin olive oil
1 pound loose sausage meat
2½ cups beef broth
¼ cup coconut flour
½ cup coconut milk (canned variety)
1 tablespoon onion powder
1 teaspoon garlic powder
½ teaspoon sea salt
Dash ground black pepper

Biscuits:
1 cup shredded cheddar (or other) cheese
2 cups almond meal/flour
¼ cup coconut flour
¾ teaspoon baking soda
½ teaspoon sea salt
2 large eggs
4 ounces butter, melted (or other oil, e.g., extra-light olive, coconut, walnut)

To make gravy:
In large skillet, heat oil over medium heat. Sauté sausage, breaking up as it browns. Cook until thoroughly cooked and no longer pink.

Turn heat up to medium to high and pour in beef broth. Heat just short of boiling, then turn down to low heat. Stir in coconut flour, little by little, over 3-5 minutes; stop adding when gravy obtains desired thickness. Pour in coconut milk and stir in well. Add onion powder, garlic powder, salt, and pepper and simmer over low heat for 5 minutes. Add additional salt and pepper to taste. Remove from heat and set aside.

To make biscuits:
Preheat oven to 325° F.

In food chopper or processor, pulse shredded cheese to finer, granular consistency.

Pour cheese into large bowl, then add almond meal, coconut flour, baking soda, and salt and mix thoroughly. Add the eggs and butter or oil and mix thoroughly to yield thick dough.

Spoon out dough into 10 or so ¾-inch thick mounds onto a parchment paper-lined baking pan. Bake for 20 minutes or until lightly browned and toothpick withdraws dry.

This sounds good, too!
I had never heard of biscuits and sausage gravy until I was an adult. I'd only had it once in a restaurant, and then made it several times as a dinner meal for family. I don't know why I had a hankering for it. But, it's nice to know I have a couple of choices the next time I feel the need. Thanks!
