Thanks. Rice is the only thing I really miss. I might give this a try in the near future.

Let me know if you try it, and how you fare with it - DH and I stick with a 1/2 cup serving and no ill effects for either of us. BUT disclaimer - neither of us is diabetic so we don't test blood sugars. We go strictly by how it makes us feel, including whether it triggers cravings. So far so good!

Since Harpmaker found this thread in looking for sprouted grains bread recipes, I am going to link to that new discussion, because I have changed up my recipe. I realize not everyone has access to spent grains (a byproduct of whole-grain homebrewing of beer) but if you DO, this makes a dandy bread.

I end up with about 12 to 15 pounds of spent grains, so have taken to putting up a Freecycle ad so folks can use them as they please. I have a couple of people who have asked me to let them know any time I have them!

Which I say to let you know if you're interested in spent grains, put a "wanted" on Freecycle or Craiglist, or if you have a local brewpub or brewing supplies shop, you can check with them to see if they might give you some spent grains.

If anyone tries this and/or wants more info - you know where to find me!

I bought some Einkorn flour recently, but Jovial Foods also sells the whole grains. I'd like to try your process sometime, Char. Not anytime soon obviously, not until I get to goal. And at the rate I'm going on that front, that could be a lifetime away. LMAO. But I've printed out all your instructions, notes and recipe for future trials. My grass-fed beef supplier in the panhandle started selling his red wheat last year, too. One of our local bakeries makes sprouted wheat bread on special order, but I've never tried hers. Bought one from Sprouts grocery in Round Rock which was OK.

Sprouting your own grain is easy - then dehydrating/grinding, not rocket science, you just need the proper equipment!

You'd love it, Peggy. And you'll get there! I know you will - sooner than you think!
