Make your own coconut butter?
Has anyone tried this? I was searching online yesterday and came across a recipe blog (not low carb) that said all you need to do is process unsweetened shredded coconut in a food processor for 6 - 10 minutes. Not coconut flakes, as they are dried. Keep scraping the sides down, and if needed add a little coconut oil to thin it out.
I am going to try it out. I like the idea of getting the healthy oil, plus the added benefit of the fiber from the coconut meat. Obviously you need to really LOVE coconut, which I do!
