"bread spice" recipe can any help?

Someone, I think her name was Birkit, posted a recipe for a bread spice that she used in making breads taste "bready"...seems it had caraway seeds, and several other seeds that I had to buy special but it was so good. Unfortunately, I've lost the recipe. Can anyone help?

Couldn't find it on Birgit's blog, but there are several little articles on about.com and others. This is a cut/paste of the recipe called Brotgewurz.

"A lot of dark breads in Austria, Germany (particularly in the South), Switzerland and South Tyrol are made with Brotgewürz (bread spice). Bread spice is great for the taste of the bread, but it’s also good for your digestive system."

The basic spices used are caraway seeds, anise, fennel and coriander seeds.

What you’ll need to make it (for a 1 kg bread loaf) –

2½ tsp of caraway seeds
2 tsp of fennel
1 tsp of anise
½ tsp of coriander seeds

You can also experiment with small quantities of allspice, fenugreek, sweet trefoil, celery seeds and cardamom – or just use one of these ingredients for your bread e.g. just caraway seeds or just coriander seeds. The taste of your bread will be very different depending on your bread spice choice.

to me, personally, that sounds JUST AWFUL. no bread I have ever enoyed tasted like any of those things. but I know people love rye bread, and I guess this is the vibe this recipe is going for. just don't think it will make something taste like normal bread! LOL

the only thing I can think of that would make a good dose of caraway seeds WORSE is adding fennel to it. LOL

I think it sounds delicious!

It will never be the same as mom's old-fashioned white, fluffy, carby slice of heaven...but I'd try some of this in any low-carb bread...bet it would be yummy.

I hope you will try it. We love it and use it for everything
from pastrami, corned beef, Swiss cheese, grilled in butter
for a melt. Jay uses it for his 'bagel' smoked salmon, cream cheese,
black pepper, dash of lemon juice and he's good until dinner
( well almost)

Your knowledge of the spices for those European breads is
amazing. I hope she finds her recipes.
