Peanut Butter Fudge - LowCarbFriends Recipes

hope i am posting this correctly. i tried making the fudge recipe, and all was well, melted butter, peanut butter, stirring in splenda....then the problem occurred.

when i added the protein powder and i used (vanilla jay robb whey protein powder) as i stirred it in, the entire batch started to separate and it appears that the butter has separated from the batter and it quickly became lumpy with a sea of melted butter floating on top and it would not mix back in.

anyone have any idea why this happened. i am a pretty darn good cook but have never had this happen. this is my first time making this recipe.

That has happened to me too. I'm not sure if it's the melted butter as opposed to softened or the brand of protein powder and in my case the use of erythritol but I finally had success using softened butter, liquid splenda and Body Fortress protein powder.

When that has happened to me, it was because the butter/PB mixture was too hot.

thanks so much ladies...i did go ahead and put it into a container, will it ever solidify or is it ruined??

Cool it a bit and try stirring it back in. As it cools it should resolidify and be able to be blended together.

Concur with the previous posts - too hot! :)

thank you ladies!!!!!!!!!!!!!!! i went back down to check and could in fact stir it all back together, and have now spread it back out into another dish to harden. lets hope it works!! it still taste delish!!

It happened to me too. Now I use coconut oil instead of butter and set the jar in the sun till the oil is liquid but not hot. I make this fudge at least once a week, it's become a staple around here. Glad yours stirred back up, anything with Jay Robb is too precious to toss.
