Any ideas what to do with chicken broth?
 
Any ideas what to do with chicken broth I have a batch every week to do something with. I wish there was a good LC noodle recipe out there. I looked on Linda Sue's recipes but she wasn't to excited about either one of the two that was on there. I cook a whole chicken in the crockpot each week for my little dog and myself so I have lots of broth.

You could probably make a chicken soup with Shirataki or tofu glucomannan noodles, but you may want to check out Buttoni's thread on dumplings instead.

And although I usually can mine in a pressure canner and use in recipes, you could freeze your leftover stock and when you have a big batch, you could throw it all in a stockpot and reduce it by one half to create your own chicken demi-glace (concentrated chicken broth) for sauces, broths and soups.

I keep both chicken and beef on hand although I find the chicken to be much more versatile.

I don't how long you've been doing your weight loss. You could add dreamfeilds angel hair. Spaghetti squash or zoodles.

Chicken stock is great in lentils or beans or just about any soup, like cream of spinach, vegetable, etc.

You can also freeze it to use later. I often use it when I saute veggies too--add some to cut down the oil a tad.

There is a great dumpling recipe on here that you might like to try also.

If you add a little salt and some sliced green onions, it makes a dandy warmer-upper to just sip. Add a dash of hot pepper sauce too if you like.

Or make eggdrop soup, or avgolemono (Greek egg drop soup) - I know there are recipes for both here.

I use mine when I'm making quinoa or riced/mashed cauliflower - I cook both in chicken stock, it adds a lot of flavor.

Thank you gals you gave me lots of ideas. I don't like to throw something like that away. I had thought of egg drop soup but really want some noodles. I will check out the dumpling recipe. This is my second day on induction. so far so good.

wow are zoodles induction friendly? I think they are but let me check.
Zoodles are zucchini cut in strips with a veggie peeler.

If you can handle eggy, you could make egg crepe and cut into noodles.

Egg crepes work great as noodles! Great suggestion.

you can make wonderful soups with chicken broth and almost any well cooked vegetable. season appropriately and blend in blender till thoroughly pureed. you can make it nice and thick (cauliflower and curry powder is sensational) but the carbs mount up if you aren't careful. fairly thin is good too.

Chicken stew
4- cups broth
1/2 cup heavy cream
1-2 table spoons butter
salt and pepper to taste
YUM YUM I could sip this all day out of a coffee cup.

If you want noodles in your chicken soup, the noodles I made from Peggy's dumpling mix are just nothing short of amazing! I don't even like chicken soup, but I find myself making it just to have these.

I am making an order in the morning for some glucc powder believe you me these look so good I can almost taste them. I miss noodles and dumplings. You gals on here really make it easy for this lifestyle change for me. In the past few years I have been very ill with lyme disease and was antibiotics for over two years now I battle all the time with yeast in my colon. My husband and I both are watching our sugar so this lifestyle change we are doing we don't need the sugar and I feel very bad when I have much of it. So thanks for making my lifestyle change pretty simple. I have copied recipes on here and have written on recipe cards until my fingers cramp. But I am really going to do this. A big thanks to Buttoni, Linda Sue and the recipe room. I've spent the morning preparing and freezing what I can so I can just pop something out of the freezer on days I don't want to cook and we are good to go. Susan
