Help with Cornish Game Hen

I've always made them stuffed with 1/2 an orange, a few cloves of garlic and some cornbread stuffing. I'm making them tonight, and I have no idea what to stuff them with, if anything - does anyone have any suggestions?

I'm serving them with panfried turnip greens, if that makes a difference.

Britt - probably too late with this answer, but I'd just sprinkle the inside with some salt and pepper, rosemary and thyme then put in some onion and celery and bake.

What did you end up doing?

I slather butter and herbs in and on the hens then put them on a rotisserie, coating every 20 minutes with more until they are done (1.5 hours)
Never thought of putting more inside - will have to try that

Just a little too late But strangely enough, I did a combination of what you and omgtwins suggested! I roughly chopped some onions and celery, then put a quarter of a lemon in each one, rubbed them with butter, seasoned them (I used kosher salt, coriander, basil and poultry seasoning) and put them in the oven to bake. I basted them with lemon butter every and turned the pan every 15 minutes (my oven is terrible) - they came out great!
