What's your favorite cracker recipe

This Friday, we will have a nacho meal at work. I usually just skip those lunch functions, but would like to participate this time. The toppings are all rather low carb, but I will have to bring my own crackers to avoid the tortilla chips. Would you tell my if you have a favorite low carb cracker recipe that would be good with the nacho fixings?

I have several I like a lot, but for Mexican food, I'd say this one with the cheese would be my choice: Almond Thins

My favorite thing to use for tacos and taco fixings is to take about 1/3 cup of cheddar cheese and put it on a parchment lined plate and spread it out thin then microwave it for about a minute or until the cheese is melted and browned. Take it out and fold it over until it holds its shape, or you can just break it up into pieces to scoop up the taco fillings or to add to a taco salad.

I think the idea came from Charski!

Chips

We like to take Tillamook Cheddar cheese slices and place on
parchment and nuke:

4 slices cheddar cheese
Lay on parchment. Place on tray in microwave (1200 watts is ours)
with a revolving table.
Nuke for 4 minutes. Remove and cool. Break into large or small
pieces. I just take about 20 minutes and do a batch. Place in
a zip lock with a few paper towels to sop up extra fat if any.
They will stay good for a week, that is if no one scarfs them
down. They are good crisps with body.

I use Joseph's lavash bread (find it at Walmart). Cut it into cracker size pieces and bake it on a cookie sheet for 8-10 minutes until they are crispy. Watch it because they burn easily. I like to spritz mine with a little water before baking and season them with lemon pepper or salt or garlic or even nacho flavored popcorn seasoning. I make nachos with them occasionally and they work great.

Great ideas! I've been making crisps with mozzarella and Deluxe American, but will have to try the Tillamook. We don't have Joseph's Lavash bread at our Walmart, but I'll look around.

Peggy, those crackers also look like something that I would like. Yummy.

Lavesh bread is not at all walmarts. Check in the bakery, bread isle, and in front of the deli. I've found them in different places.

Flat-out breads also.

I saw a new recipe on Linda's site for almond cheddar crackers. They looked awesome and she gave them the highest rating! Just look at her site and in the news section
