Walden farms marshmallow dip dupe

I know a lot of people hate this stuff, but I think it has its' uses.

Has anyone ever had any success making something like this at home? I'm intrigued because it doesn't have any animal products that I don't use but that are usually in marshmallowy things (egg whites, gelatin). I've tried whipping some xanthan gum but the texture is no good. And I'm not sure what the cellulose fiber in it is. I'd sure like to be able to make it myself!

That's an interesting recipe - way too many calories from the cream, though, compared to the Walden Farms product. Like tofucheez, I'd love the find a way to duplicate the dip without using dairy. I use the dip as a texturizing ingredient when I make certain versions of Ouizoid's super-low calorie muffin for my JUDDD down days.

Edited to add: OOPS I didn't read far enough into the thread. There is another recipe there that I will try when I get back from vacation! Thanks drjlocarb for pulling this up.

Thank you. I don't do any animal products at all, so I will try the first version subbing almond milk for the cream....hope it works!
