Pork tenderloin recipes?

Usually I coat pork tenderloins with salt, pepper, garlic and onion powder then bake @ 500 for 5.5 minutes per pound then turn the oven off and let the pork sit in the oven for an hour.

It comes out perfect with a beautiful crust. I'm a bit bored of the flavor though and would love some new ideas. Please help

I coat them with Dijon mustard and then "bread" them with a mixture of ground pork rinds and grated Parmesan cheese. Bake as you do... they're good. I often serve a bit of sugar free cranberry sauce with them.

2 cups red wine, 3 cloves of garlic, crushed, salt, coriander, or favorite spices. Put them all in a bag. Cut little slits all over the pork, and put into the bag. Marinade for at least an hour, up to overnight. Cook for an hour in a 350 oven with the marinade. Pour in 2 cups of beef broth and roast another half hour, turning the roast over to get all the flavors in.

It's technically a recipe from the 1300s (I do medieval reinactment) but its become one of my go to pork dishes when I want a different flavor

For me, onion powder and finely chopped rosemary are a marriage that can't be beat for pork. I also put a little salt and pepper on it and then roast.
