cheese rounds

I couldn't find this recipe in this forum, so perhaps it's something you'll like.
Almond Cheese Rounds-Low Carb Recipe

Ingredients:

Servings:

Units: US | Metric

1 cup grated cheese
1 cup almond flour
2 tablespoons butter
1 egg
1 teaspoon garlic
1/4 teaspoon salt

Directions:

1
Preheat oven to 350°

Mix up all ingredients.

Press into 6 muffin top pans to make the round shape.

Bake for about 10-12 minutes until golden brown.

Really good coated with butter & garlic and put under the broiler for a few minutes.



I started making these today and my husband and I really like them. My muffin top pan must have wider holes than the one used for making the photo of the sample rounds. Anyway, mine were rather thin and crunchy. We put a tad of pizza sauce on them along with mozzarella and pepperoni. These little personal pizzas were better than any other low carb pizzas that I'd tried.

I made these to go with our left over green chile stew and they were a hit. My tweaks were adding some dried thyme and 1 Tbls Vermont Cheddar Cheese Powder from King Arthur. I shaped them into rounds by hand, flattened them with a fork a bit and got 8 out of the recipe.They are crispy outside and soft inside. Great road food, thanks so much for the recipe.

In two days, I've eaten so many of these that I'll probably gain some weight. But for years, I've sabotaged my LC diet by trying to eat on plain meat and vegetables. Now, we're using almond flour and flax meal like crazy, and I'm totally enjoying most of the new recipes (uh, there have been a few flops).

I made these for dinner last night and I loved them.
I substituted dried minced onion for the garlic powder and they were yummy!!

I'll definitely add these to my arsenal of staples. Thanks again for the recipe.

I made these today and they are good.

I read the recipe to mean 1 teaspoon of minced garlic so felt like mine had too much garlic but maybe 1 t of the powder would be better.

I am anxious to hear about and or try more variations of these. Wonder if you used a very mild cheese if you could make a savory version?

They are savory to me.

I'm thinking that if you used mozzarella or jack cheese and added some sweetner, then you could use them for toast and jam maybe.

I think I'll add chopped jalepenos to my next batch just to kick them up a notch.

Oh, I love your idea of adding the jalepenos to them, and also, I picked up some mozzarella to try a sweeter version.

I think these have tons of possibilities.

I think these different flours make LC a fabulous long-term way of eating. Unfortunately for me at least, I still need to control my portions.
The upside is, you don't feel deprived. There's a "fix" for nearly everything.

Made these last night to go with chili. I just flattened it out on a Sheet of parchment paper and made it like a focaccia bread then cut it into pieces. Very good. Anyone try a sweet version?

I feel the same way you do. Having recipes for quick breads, snack cakes and pizza crusts make this woe enjoyable and one I believe I can stay on for the long haul. I, too, have to limit my portions as I try to stay around 1400 calories daily. I appreciate all of the experiments people have tried on this board; and how the OP searched another site to bring this recipe here to LCF.

I had a lightbulb moment and I need to make some more cheese rounds before I try this...someone mentioned pizza.

I'm thinking these would make great mini pizza crusts too.
If anyone tries this, please post your results. I'll probably try this over the weekend and then I'll post back with my results.

I made them last night for personal pizzas!
I had not yet tried them as a cracker, and now I can't even imagine them that way.

I spread the dough out between the 6 "wells" in my muffin top pan. The edges were crispy, but the bottoms would never have been a "cracker" to me. I'd have to roll it out and bake it in a sheet to see if that would happen.

I thought these will be my new pizza crusts. My sister made them as pizza the night before and she said the same - her new pizza crust!

Don't think these were ever intended to be a cracker or did I miss something?

I did try a slightly sweet version. Just left out the garlic, used mozzarella, and added a Tbs of cinnamon and 5 drops of ezsweet. Came out mildly sweet and was good toasted then spread with cream cheese with my coffee today.

I want to try the pizza crust next! Thanks to lazy girl for this quick, easy recipe!

I used mozzarella in the pizza crusts. Very nice.

I made this recipe tonight, and pressed it out in to a pizza crust. Out of this world! I usually make cauliflower pizza crust, but wanted something rich and breads tonight. Ths fit the bill- awesome recipe!

I'm thinking if you pressed these out in a very thin layer and baked them on a cookie sheet, then they would be more like crackers. The cooking time would probably be a lot less and you would have to keep an eye on them.

They taste a lot like the cheese chips I sometimes make in the nukker with american cheese, so I'm thinking a cracker is totally doable.

Those look yummy!! I bet they would make good pizza crusts using mozzarella for the cheese, and like Nigel said as crackers if the dough was spread thin.

I'm low on eggs otherwise I would be trying this right now. I wonder if I could use egg white powder, which I have plenty of.
