I have to cook up Italian sausage links.. help :)

Hey guys I have to cook up some hot spicy italian sausage links tonight for supper. Any ideas how to make it interesting??

I have the same dilemma! I think I may throw them in my crock pot for tomorrow with bell peppers and onions, maybe some celery, and a little broth.

or you could use them in Linda's low carb pizza bake? or spinach lasagna? Im getting hungry thinking of all the possibilities

Italian Sausage with Onions, Peppers, Tomato Sauce and Cheese Linda
19 1/2 ounces Italian sausage links, about 5 links
2 tablespoons oil
1 large green pepper
1 large red pepper
1 large onion, 5 1/4 ounces
1 clove garlic, chopped
1/2 cup spaghetti sauce
4 ounces mozzarella cheese, shredded, 1 cup
Heat the oil in a large skillet on medium heat and brown the sausages. Meanwhile, cut the peppers and onion into thick slices or chunks. When the sausage is about half done, add the peppers, onions and garlic. Cook until the sausage is done and vegetables are tender-crisp. Remove and slice the sausages diagonally into bite-size pieces and return to the skillet. Stir in the spaghetti sauce; cover the pan and simmer 5 minutes to heat the sauce. Sprinkle with the cheese, turn off the heat and cover the pan to melt the cheese.

Maybe a modified version that sounds good I just dont like peppers

I was going to post that recipe too. Here's the photo of it:



I think you could substitute any veggie that you like such as green beans, broccoli or zucchini. Mushrooms would be nice in it too.

I put the sausages in a pyrex baking dish,top with low carb sauce, sprinkle on some grated parm and bake, covered, till sausages are done and sauce is reduced. Serve with extra grated cheese and a salad or cooked fresh green beans.I make my sauce with a can of diced tomatoes, lots of fresh garlic, basil and oregano and salt. Whirl it in the blender and there ya go! One of the easiest and tastiest low carb suppers going.
