I know I am a bit ahead of time for Derby Day. And I tried to search on this site for alcoholic drinks but don't seem to find it. I know there is a thread on here somewhere for them. But am looking for a recipe for LC mint juleps. I have a huge bottle of sf peppermint syrup from Starbucks. Don't really like it but thought maybe it will come in handy for this drink when I am helping out with a Derby Day party and don't want to imbibe in a sugary drink. Stayed LC with the eggnog at Christmas, yeah!

I have a little cookbook written by Marlene and Chuck Koch that is about Low-Carb Cocktails. Her sweetener of choice is splenda. Here is her recipe for Mint Julep but it doesn't call for syrup but can give you a guideline.
Fresh mint leaves
2 tsps Splenda granular
2 tbs water
2 1/2 ozs bourbon
Splash of club soda
In a large rocks glass, using the back of a spoon, press and crush 5 to 8 mint leaves (to break apart and release oils) with Splenda and water. Fill glass with ice. Add bourbon and stir. Top with club soda and garnish with additional mint leaves.
