Looking for recipes that call for cooked chicken
Hi! I'm cooking 4 whole chickens today and am looking for inspired ways to use all the meat. Tonight we'll have roasted chicken for dinner and I've planned to make chicken divan and chicken & cheese pizza crusts. Will likely make up a batch of asian chicken slaw as well.
Would appreciate any other ideas you have... bonus points for any dish that can be assembled and frozen :)
I would pull the meat and use all those bones for a couple of batches of soup as well... very low carb is chicken and vegetable, with different spices. Depending on where you are carb wise, you can also do terrific taco soup, or chicken and white beans with kale.
They all freeze beautifully.
The "mushroom chicken and sausage casserole" on Linda's site (genaw) is a favorite in our house. It freezes well and makes a good breakfast (if you're into odd things for breakfast).
I also will freeze shredded chicken in LC barbecue sauce to heat up later for sandwiches/salads.

One of my favorites that I haven't made in a while. (I will now, since your post reminded me.) Treat the ingredient amounts as guidelines and feel free to substitute Velveeta for some or all of the cheddar, if you feel like going the traditional Chicken Spaghetti route!
Susan's Rotel Chicken Spaghetti Squash
* 1 spaghetti squash, cooked using your preferred method and shredded
* about 2 cups chicken, cooked & cubed
* 1/2 cup diced green bell pepper
* 1/2 cup diced red bell pepper
* 1/4 cup diced red onion
* 1 celery stalk, minced
* ½ cup mushrooms, chopped
* 1 Tbsp butter
* 1 (14.5 ounce) can rotel tomatoes, drained
* 1 small can sliced black olives (optional)
* 1/4 teaspoon salt
* 1/4 teaspoon ground black pepper
* 2 1/4 cups shredded sharp Cheddar cheese or more to taste
# Preheat oven to 350 degrees . Lightly grease a casserole dish.
# In a skillet over medium heat, saute' bell pepper, onion, celery and mushrooms in the butter. Add Rotel tomatoes.. Continue to cook and stir until vegetables are tender.
# Mix the shredded squash into the skillet, and season with salt, and pepper. Add olives if using. Cook and stir until heated through. Remove skillet from heat, and mix in 2 cups cheese. Transfer to prepared casserole dish.
# Bake for 30 minutes. (I sometimes leave it in there for 45 minutes.) Top with remaining cheese, and continue baking until cheese is melted.

It really is! You can also throw some cream cheese into it to make it even richer/creamier.
Tonight I cooked a spaghetti squash, scooped out the s-ghetti. Put some of the squash on a dinner plate, topped with leftover chicken, 4-6 frozen broccoli florets, topped with jarred Bertolli alfredo sauce and nuked for 4 minutes, covered. I also added a little bit of water to the plate to help steam the broccoli. After heated I sprinkled with black pepper and parm cheese. Had a tablespoon of jalapeno cranberry sauce with it. All in all quite a delicious meal, IMO!
My husband and I enjoy a chicken casserole I made up a while back.
1/3 box of Dreamfields Penne noodles - cooked and drained. (5.5 carbs each)
1 cup of cooked chicken (kind of shredded)
1 tbls butter or olive oil
Mrs. Dash Chipotle
Garlic, Cumin, &
Red pepper flakes (add to your taste preferences - we like it pretty spicy)
3 ounces of Colby cheese.
Cook noodles, melt in the butter and cheese, mix in the chicken, and spices.
You may want to put it in the oven for 15 minutes to heat...or not.
It's as fast as a box of mac & cheese if you don't- more home-style if you do.
I like this way because I can bag the other portions and they are ready for next time.
I use Maria's pizza crust and make a chicken garlic alfredo pizza with the cooked chicken. Sometimes I made a chicken garlic pesto alfredo pizza. YUM!
Oh, any of the cordon bleu recipes (casseroles, soups, etc.) are easier if you start with cooked chicken.
