Thanks Barbo!!!

Tried your tweaked cauliflower tater tots last night. Turned out great!!! Suprised how crunchy they were. You can use your imagination adding different herbs/spices. I spiced it up with Tony Cachere's (sp?).


Here's the recipe for anyone interested.

Low Carb Tater Tots! Yummo!

. I decided to try to make tater tots. Here is my recipe
Tweaked by Barbo

1 Cup Riced Cauliflower, lightly steamed, dried out
1 Cup Colby/Jack) shredded
1/2 Cup Crushed Pork Rinds
1 egg
Onion powder to taste
Black pepper

I mixed it all in a bowl and then formed Tater Tot shapes by hand. I put the Tots into hot peanut/evoo in a skillet and once browned turned them until all sides were brown. I sprinkled a little Kosher salt over top.

Thanks for this! Going to try it tomorrow as hubby has requested a 'snacky' dinner to eat while watching the Broncos game

Yeah - wings and tots sounds good to me! Thinking next time, I'll add some finely chopped jalapenos.

Jalapeno Poppers

There is a great recipe on this board for poppers.
Many of us tried them. DH is addicted.

Here's another snack for the games.

Poppers Wrapped in Bacon
Foil a large baking pan. Spray with Pam
20- large Jalapeno's, or peppers of choice
12 oz. cream cheese
1/2 to 3/4 c. 3 cheese Mex blend
Fresh ground pepper
Onion /Garlic seasoning to taste
Bacon strips cut into thirds

Wear vinyl gloves and slice the jalape˝o's in half and empty out all the seeds and membranes.
Rinse in colander and dry them.
Mix cheeses and seasonings well. Stuff into the
peppers. Wrap the uncooked bacon around each.
Lay on the sprayed foil and bake 350 degrees
for 35/40 minutes.
