I love avocados. They are the perfect food in my book. I can't imagine how they work with chocolate in the pudding, but I will have to give it a try. They certainly have the right mouth feel.

Yumz! I make mine with sliced tomato and red onion. Mix and put in the frig for 30 mins before meal time. Delish!

OK, help me, what am I doing wrong with the chocolate pudding? I think maybe I just need to get the mix of sweeteners right, and maybe use dark cocoa powder instead of regular. First batch did not turn out so hot, but I see the potential!

Also, is it impossible to get avocados completely, smoothly blended? I used my hand mixer, but maybe I should try it in the Ninja?

I love avocados as well - Here's one of my favorite things to do...

I mash up an avocado with a little lemon/lime juice, garlic powder, and salt (basically my recipe for guacamole), then add a few crispy, crumbled slices of bacon, and chopped tomato. I roll it up in slices of provolone or white american cheese.

I call it BLT salad. I roll tuna salad up in cheese slices too.

I used my immersion blender and it worked like a charm. Very smooth and silky. I also used the dark chocolate so maybe that's important too.

Everything about it was just dreamy. I'm going to make some more right now!

ZOMG, my 2nd batch of avocado choco pudding came out soooo good! I used dark chocolate cocoa and my immersion blender. Also tweaked my sweeteners to include less powdered E and added a packet of Truvia, along with the Splenda. Still working on the perfect sweetener ratios, but this batch came out so smooth and silky and DELICIOUS.

All hail the mighty avocado (and cfine for posting that recipe)!

I can't believe how good it is! It sounds so odd, but yes, it is definitely a chocolate pudding! My favorite LC chocolate by far!

Blew me away, thank you!

I accidentally ordered too much cocoa powder and it has been sitting and sitting since I can't seem to make a LC chocolate treat I like. I will be going through it now!

Just wanted to mention, I eat half an avocado almost every day. I think it is so versatile, and wanted to thank everyone for sharing their avocado tips, so much new stuff to try out, YAY!!!!

BTW, today I am having chicken, bacon and avocado....

yummm craving avocados today! once i am a little more liberal (on stillmans at the moment) can't wait to make some yummy guac! And the chocolate pudding is devine as well!! When I was on my raw diet I loveeedd that chocolate pudding with avocados. mmmmmm..... and that soup recipe looks amazing and simple! cant wait to try them all

Not to mention there are sooo many health benefits of avocado. I used to eat one each day and credit how good my skin was to them. Gosh dying for one now.

Can't wait to try those recipes! Avocadoes are the bomb...if i just need something quick, i eat one right out of the shell with a little Lowery's season salt, a few drops of sriracha and a squeeze of lime if i have one handy...no dishes to wash!

I also like something like mimosa describes, with sardines, I got the idea from Alton Brown, minus the bread

Made my 2nd batch of avocado pudding yesterday. The first batch I made with regular swerve, using immersion blender. It was very good but a little gritty, so this 2nd batch I made with powdered swerve, and a few drops of liquid stevia. Perfect!

The only thing I hate about the immersion blender is so much sticks to the blender and I have to scrape, lick that thing off to get all the yummy pudding, wish it would whirl or shake off

How do y'all keep your guac from getting a little brown, assuming you have some leftover. I do add lime juice but it still seems to turn a little on the surface.

Hi flossie, put saran wrap over it, or put in glass container with lid. Just so air does not get to it. A little lime juice around seed will work also.

The biggest drawback of avocados is waiting for them to soften...picked up 6 yesterday at Costco and wish one a day would soften...but they'll all be ready at same time, probably at least 3 days. Any tips to stagger and speed up ripening process?

Okay, I have made my own guacamole many many times, but was just introduced to a product at Trader joes and love it. Bought it for my girls for when they were home from college over the Christmas break but hid it for myself! It is Chunky Guacamole with Grek Yogurt. Per 2 tablespoon serving 2 carbs with 1 g of fiber, so 1 net carb per serving. Needless to say, I have kept a container in my frig ever since discovering this tasty treat!
