Coconutty Crackers - hard, crisp crackers. Keep them in a cookie tin at room temp.

Thanks! That is actually from last Christmas...I need to update. They are just as cute this year, but much more mobile and have much more hair :)

BY FAR the best and most convenient to me are the ones made with processed cheese slices. I just made a set of 9 for lunch. You get the lowest carb processed cheese, usually Kraft I find, and cut/break a slice into about 9 squares. put them about an inch apart on a sheet of parchment paper and microwave on high for one minute. they are tasty, very low carb, quick, and cheap (if you get the 99 cent special on cheese like I do.)

For dipping, my favorites are the crackers made from Joseph's Lavash Bread. They are very sturdy and have a very mild, neutral flavor that does not interfere with the flavor of the dip.

I love the Joseph's Lavash Bread crackers, too. Just cover a small cookie tray with parchment paper (I use my toaster-oven tray) and lay a piece of the lavash bread on it. Spray the top with non-stick spray and score into as many crackers as you want--a pizza cutter works beautifully for this. Dust on a little salt if you wish, then bake for 7-10 minutes at 350. Watch carefully or they'll burn. I find these crackers to be very tasty and to hold up beautifully for dips and cheese. They are also filling, and I usually only eat about a fourth of the batch, tops, at any given time.

It's on my list of to-do's today to make Jennifer Eloff's coconutty crackers--I just read through the 4-page thread she linked to above, and had forgotten that I made them years ago and really liked them!

My Fav;

1 T flax meal
1/2 T. Parm cheese in the can
1 T finely ground almond meal
water to make a dough

Bake 350 for 10 - 15 min.

Yep, that's very close to the recipe I use. I drop by tsp onto parchment, cover with a bit of plastic wrap, and smoosh with the bottom of a glass. Nice, round crackers! A sprinkle of sea salt, then I bake for about 20 minutes, then turn off the oven and let them dry for a while. If I'm making a ton of them, I use the dehydrator to crisp them...works really well.

Ditto on the Joseph's flax bread. I mostly brush with some sf syrups, spray, and microwave until crisp. Yum! Have also used some vinegar and salt to imitate the vinegar/salt potato chips.

Just Cheese: slice your favorite cheese thinly. Saute in a pan over medium-high heat until crisp. Let cool. It magically becomes the perfect cracker, and it only takes a moment!

Mock Cheez-its (the american cheese in microwave above). You won't believe it until you try it. I use Kraft Deli Deluxe cheese. Some other cheeses work, some don't but this particular cheese makes the PERFECT Cheez-its.

Skillet sprinkled with shredded cheese & browned well on both sides- cheddar and pepper jack both work particularly well. Great crispy large cracker/ taco shell.

Almond Sesame Thins- dough made from
1 cup almond flour
1 egg white
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/3 cup sesame seeds
