Thanks for the suggestion, Kalatraza. Actually I have solved the crumbliness problem and I needed more liquid. Still it is intriging to think of how to tweak the recipe using egg white powder. Right now, my pizza crust recipe is as follows:
Coconut Flour/Oat Fiber Pizza Crust
1/4 cup coconut flour
1/4 cup oat fiber
1/4 cup protein powder (I use pea protein)
1/4 cup psyllium powder
1 tsp. salt
2 tsp. baking powder
1 tsp. garlic powder
1 tsp. Italian spices
2 Tbs. Parmesan
1 cup liquid egg whites
Optional: 2 drops sucralose
1 1/3 cup boiling water
Mix all dry ingredients together. Add egg whites and sucralose. Beat again for a minute. Add boiling water. Beat until it thickens, aboiut 1 minute more. Plop onto 2 pizza pans. Roll out dough under plastic wrap. Bake at 375 for 25 minutes. Flip. Bake 10 minutes more.

After that, I add my toppings and either bake the pizza again until hot and melty or nuke it. I found that the oat fiber needed more salt, which is why I raised it to 1 tsp. The sucralose does not make it taste sweet. It just tastes normal.

This is a fiber bomb, so be prepared!

Soobee, do you powder the psyllium husks and then measure them? I might try your version next!

I made as written and it was yummy as always. I used an Alfredo sauce and for the toppings I used mozzarella and cheddar cheese, chicken, broccoli, garlic and onions. It was amazing!! I love being able to pick up and eat pizza again and no funny tasting crust either!!

Since so many people are having trouble with the bread....i wonder how this modied version would bake up as a loaf instead of a crust...i cant try as i am at work. If anyone does try maybe we could post it to the healthified or best bread thread too.
