Need help with a recipe

I have a wonderful muffin/cake that I make for breakfast a lot. I make it in the microwave, but want to figure out how to make it in the oven and make more at once as well... but I have no clue how to do it.

Here's what I do now:

3 TBSP Ideal sweetener (powder equal to sugar)
1 TBSP flaxmeal
3 TBSP coconut flour
1 tsp cinnamon
1 whole egg
1/2 tsp vanilla extract
2 TBSP coconut oil
4 TBSP whole milk

I mix it all together and microwave for 3 1/2 minutes. Then, I mix about 1 1/2 tsp coconut oil, 1 tsp butter, 1 TBSP peanut butter, and a shake or two of cinnamon. Melt that in the microwave and pour over muffin/cake.

It's very delicious, but I'd like to make a bunch up at once (without my drizzle topping, I think) and freeze them for future use. I was thinking of expanding the batter and cooking in the oven in muffin tins, but have no idea how long to cook in the oven or at what temperature. Also, I didn't know if I would need to switch up the ingredients a bit for oven cooking vs. microwave cooking.

Any help you could provide would be greatly appreciated!

I don't find you need to change ingredients from microwave to oven. muffin tins are a good choice--baking this sort of thing in a larger pan, say to make a loaf, tends to get the outside VERY dry before the inside is done. the smaller unit the better, in terms of even cooking and retaining moisture.

Thank you! What about cooking temp and time? I have no idea. I was thinking 350 degrees for temp, but don't really know about that or the time.

I'd say 350 degrees for 12 to 18 minutes.

Thanks, Esther! I'll give it a try (hopefully soon). I think I'm going to multiply my ingredients by 6, which will hopefully make 12 muffins. I'll let you all know how it goes.

edit: On second thought, perhaps the first time I'll try to only make 6 muffins just in case they don't turn out.
