Gingerbread cookies?

I'd love to make gingerbread men with my 2 year old grand daughter while she is here for Christmas. Any ideas for a cookie dough that will roll out and can be cut with cookie cutters?

If it doesn't have to be gingerbread, and you just want a cut-out cookie, Carolyn Ketchum has one on her website - All Day I Dream About Food. It is called Halloween cut-out sugar cookies. They are good! Be sure to chill the dough as she states in the recipe.

I made Maria's gingerbread recipe, but it didn't work for me. The dough was too sticky to roll. But that may just be me- I can't make many of her recipes work for me. I am not the world's best LC baker.

I love to make roll- out cookies with my god kids. It is such a great family activity. Enjoy!

Thanks to all. I found Lauren's recipe and it did seem to be a sticky dough. A little challenging for a 2 year old to pat out. I'll check out the Halloween sugar cookies. They just might work . Will take a look at Maria's recipe. I get her posts on Facebook, maybe it's there. I dug out my cookie cutters , have everything but a gingerbread man, had to order one on Amazon. It's been quite a while since I've made Christmas cookies.

I just happened across a sugar cookie recipe that's low carb, gluten free at Kate's Healthy Cupboard. (google it) Looks easy and may work for you.
