bone broth!

so I have read so much on health benefits of bone broth.. SOOOO I saved 2 turkey carcases from thanksgiving (along with some other parts like wings and legs etc)
I have it on a low simmer. I read for chicken you should go atleast 4-6hrs and no more then 24hrs.
I put mine on at 9am and plan to let it go till about 6pm ish.. When should I add onions, garlic, celery and carrots?
is it ok that some of the bones had meat on them still?

Any tips or tricks from others?

one more question. In my freezer I have my turkey pan drippings, should I add that to the stock?

I added ACV to leach the bones also.. I SO CANT WAIT!

oh and let me add that I read that a good gelatinous (sp?) broth is good for CELLULITE! (I will be drinking a mug every day lol)

If this works out I will make sure to make my way around town and the net looking for good prices for organic/free range bones/ofaul/feet..

I too recently read articles on bone broth. So far have only had access to beef bones (as that is what we raise) but am looking forward to benefits promised for joints among many other things. To date, I have been putting bones, acv, celery, onion, carrots in the crock pot and let it run a couple days before taking broth out and have been taking broth with my lunch to work and using it as stock for soups too.

Kerry if you put in the veggies in the beginning , you should throw them away when youur broth is done. All the nutrients are now in your broth.
I always put mine in then throw away.

If you want to eat them with your broth put them in now. 3 or 4 hours before you are going to eat it.

When you are on induction broth is very good , warm, filling and very nutrient rich.
