Chocolate Eggnog Pie

I heard this recipe being discussed on the radio on the way home from work last night so I looked it up and I don't think it would be to hard to low-carb. I think I would use a chocolate crust myself and I think there's a recipe for one in one of Jen's cookbooks but I have one I use myself but don't have the recipe with me.

I also think a white chocolate version would be good but for that I wouldn't use a chocolate crust.




Chocolate Egg Nog Pie

CRUST:
• 1 ╝ cups graham cracker crumbs
• ╝ cup margarine or butter, melted
• ╝ cup sugar
FILLING:
• 2 cups egg nog
• 6 oz (1 cup) chocolate chips
• 1 tbsp unflavored gelatin
• ╝ cup milk
• 1 cup heavy cream, whipped
Combine crust ingredients. Press over bottom and upsides of an 8" cake pan; set aside. Bring egg nog almost to simmering over low heat, stirring constantly. Add chocolate chips; stir until melted. Soften gelatin in milk; stir into eggnog mixture until thoroughly dissolved. Cool. Fold in whipped cream when mixture begins to thicken. Cover and refrigerate until set. To serve, cut into squares and garnish with additional whipped cream, if desired.

Mmmmm. I love eggnog anything. I buy these wonderful eggnog candy-coated almonds at Walmart for the holidays, but as they are made with real sugar, they are only for guests now that I don't do real sugar. But they sure are good! I'd love to try my hand at a LC version of them one day.

Can I suggest looking up an almond meal crust?

You can also make sugar free eggnog, with egg beaters, whipped cream with heavy whipping cream.. and your sweetner of choice..
hmm feel free to add some good spiced rum, and don't forget to top with sprinkles of nutmeg!
