Cupcake Wars

My family is having a "cupcake war" competition for our Christmas Party this year. I wanted to bring a traditional cupcake and a low carb cupcake that will knock their socks off. Any ideas? I really didn't have the time to look through each and every post on this website! I was thinking of something like a spice cupcake with a maple buttercream frosting garnished with bacon! Or maybe a black forest? Any ideas would be appreciated! And, I don't mind using a sugar free box cake mix...I'm not as talented in the kitchen as many of the posters on this website are! I know somebody on here has a black forest cake recipe. I haven't tried it, so I can't tell you how good it is. I love the Chicken Lady's carrot cake and her chocolate almond flour cake. I always make them into cupcakes.

Recipe Search

I'd like to try and look for that black forest cake recipe, but I have difficulty searching the recipes. What am I doing wrong?

go to the page that has the threads listed for the recipes; go to upper right side and click on "search this forum"; type in what you are looking for.

I make a spice cake with this recipe, just add the appropriate spices. I have taken these to numerous picnics and everyone loved them.

I second the Carrot Cake. I've made the cake and the cupcakes and they're delicious either way!

Pumpkin Spice Cupcake with Maple Cream Cheese Frosting and Bacon Sprinkles

This is my recipe that I came up with....I didn't win the competition...but they LOVED the cupcake. Let me know what you think!

Cake:
Pillsbury Moist Supreme Sugar Free Yellow Cake mix (Meijer)
4 eggs
2/3 cup canned pumpkin
sugar free vanilla pudding mix
3/4 cup water
1 tsp pumpkin pie spice
1/8 tsp ground cloves
2 tsp sugar free maple praline syrup (Meijer)

Mix batter ingredients and fill cupcake liners 2/3 full. Bake @ 325 for 19-23 minutes until toothpick inserted in the center comes out clean. Cool completely.

Frosting:
8 oz cream cheese (room temperature)
1/2 cup splenda
2 tbs sugar free maple praline syrup

Mix ingredients and frost cooled cupcakes.

Bacon Sprinkles:
5 slices thick cut bacon
1/3 cup sugar free maple praline syrup
1/4 cup brown sugar
1/2 tsp cayenne pepper

Coat both sides of bacon thoroughly with syrup. Mix brown sugar and cayenne in small bowl and add bacon one slice at a time and toss. Bake on wire rack on top rack in over for 20 minutes or until done at 375 degrees. Let cool and cut into "bacon sprinkles." Sprinkle on top of frosted cupcakes.

I think it sounds really good, but not even close to low carb. I looked up the cake mix and it has 29g carbs per serving. 12 servings in a box. Just for the cake mix. Less than 1g fiber per serving. That plus the sugar free pudding plus the pumpkin plus the brown sugar for the bacon. Whoo. I learned early on that just because things are labeled as "sugar free" doesn't make them low carb.

I thought that, too, but I'm definitely down for the frosting with bacon sprinkles!!! I don't need any cupcake to go with it!

I bet they really did love them! They sound awesome! All my faves.. pumpkin, cream cheese, bacon.....
