Gingerbread "Bigfoot"

Sorry, I couldn't resist when I named this recipe. Somewhere between the oven and "photo shoot spot" at the end of my dining room table, he appears to have lost a tooth!!!! LOL I promise, I did NOT eat it!!!! But one of my rat teriers may have found it and done that. LOL
I bought the pictured 14″ tall Wilton Gingerbread Man cookie pan a couple years ago and haven’t really used it with any of my low-carb gingerbread recipes to date. But I came across a recipe on Robb Wolf’s website, posted by a Kim Ludeman, that inspired me to test this “behemoth gingerbread man” baking pan.

I changed up the sweeteners considerably from the inspirational recipe so as to lower carbs. I added currants and raisins for my decoration. Original recipe had no flaxmeal and used all almond flour. My longtime favorite gingerbread recipe has a bit of vinegar in the dough, so I also added a tablespoon to this recipe (don’t worry, you won’t taste it). I think it is for improving rise, but this stiff dough did not rise much during baking, so I may need a little more. I’ll try 2 T. next time. The resulting gingerbread cookie was sort of cake-like and sort-of chewy on the edges, and most DEFINITELY tasty!! I’ll be trying this as individual cookies next baking, as I liked the chewy browned edges.

This recipe is fairly carby, since it has molasses in it, so I would not indulge in these unless you are in Atkins Pre-Maintenance or Maintenance phase. You can eliminate the raisins/currant decoration and also decrease the molasses and increase the sugar-free maple syrup by that amount to reduce carbs. My Paleo-Primal subscribers will of course want to use REAL maple syrup instead of the sugar-free maple syrup. The Steviva called for is a blend of erythritol and stevia and is about twice as sweet as sugar, but you could use another sweetener (2 T. sugar equivalent) if you prefer.

INGREDIENTS:

½ c. flax meal (I use 50:50 golden and dark mixed)
2½ c. almond flour
2 pkts. stevia
1 T. Steviva (a blend of erythritol and stevia)
1 tsp. each cinnamon and ginger
½ tsp. nutmeg
1/8 tsp. sea salt
1 tsp. baking soda
¼ c. backstrap molasses
¼ c. sugar-free maple syrup (or regular maple syrup, or omit and use ½ c. molasses for Paleo/Primal)
1 T. white vinegar

DIRECTIONS: Lightly grease or line a cookie sheet with coconut oil. Preheat oven to 350º. Beat all wet ingredients in a medium mixing bowl. Measure the dry ingredients on top. Slowly stir the dry into the wet below until smooth. Dough will be fairly stiff. If making a giant single cookie, spread the dough evenly onto the baking pan using plastic gloves or baggie “gloves”. My gingerbread man pan is approximately 14″ tall x 9″ wide. Use raisins for eyese and button, currants for his nose and mouth. Pop into preheated 350º oven for about 11 minutes. Lower heat to 325º and cook an additional 6-7 minutes. Do not overbrown/overcook. He should just brown a bit around the edges. Cool, cut apart and enjoy.

If making individual round cookies, this dough should make about 24 small 1½ round cookies. I would roll dough into 1″ balls and then press flat into 1½-2″ cookies with your fingers or the bottom of an oiled glass. The individual cookies should only require 10-12 minutes to get done.

NUTRITIONAL INFO: Makes 1 huge gingerbread man or twenty-four 1½-2″ round cookies, each round cookie or approximately 1/24 of the giant cookie has: (calculated using sugar-free maple syrup)

2.96 g protein
76.5 mg sodium
72.54 mg potassium
10% RDA Iron (all other macro-nutrients are less than 10% RDA)

He's pretty cute, Buttoni! Do you think the cookies would be soft, chewy gingerbread or more like crispy gingersnaps?

Looking at that picture is making me hungry and I just put dinner in the oven, won't be ready for at least an hour!! I have to leave this board now or I'll be snacking and I really don't want to do that! I'll be back later!

He's adorable. What a great holiday treat for children and sharing with your grandchildren.

I 'mmaking boxes for my grandkids. Homemade blackberry jam and syrup. Blackcherry syrup. Peach- pineapple Salsa. In their boxes so your Gingerbread man would be great. I have gingerbread men cookies rings or cutters.

Tweaker, these are definitely soft in the center and chewy around the edges. Not crisp like gingersnaps at all.

OMG Esther, that sounds so cool. Can I be your grandkid this year?

This is absolutely charming, and sounds delicious. I have *got* to get a pan like that, I just love this. Thanks so much for this, because even though my son is 26, this is something he will get a big kick out of for Christmas Eve, and we all love molasses/gingerbread cookies. This is perfect! Lene, I found the pan at my Marshall's store if I recall correctly. But I'll bet you can order one direct from Wilton's website, unless it was in Marshall's because it's been discontinued.

Popped over to amazon and ordered him for $8 with free shipping. I can't wait to see Danny's face on Christmas Eve when I unveil a giant gingerbread boy. Jeff's either, for that matter. They'll really like this. We always have a mug of mulled cider and watch a Father Christmas dvd (Raymond Briggs) on Christmas Eve, since before Danny was even born, and I always bake some sort of cookies. This big guy will be just what we like!

Glad you found one. I checked Wilton's website a couple minutes ago and the pan they sell now is aluminum but not non-stick and not quite shaped like mine. If they still make the non-stick one I have, it's very well-hidden on their site.

2105-059 is the item number showing on the one I got at amazon, and it says it is 14" and nonstick, and looks like yours. Maybe some older stock getting sold on amazon? Which is fine by me, because I'd rather have this one than the other style.

I just looked, and there's another Wilton pan just like the one you have and the I ordered for $7.99 only this other one is being sold for $11.96. So, I guess I did ok on the deal I got.

Isn't he just cute as all get out? I can't wait to make one! I even ordered a simple set of deco bags and tips so I can make a lowcarb deco icing using the powdered swerve and try to dude him up with cuffs and socks and so on... I've not done that before, but it sounds like a fun "day before Christmas" thing for me to do.

That'll be fun, Lene. I wanted to let you folks know the original recipe used all almond flour, so if you don't want to use flax, just use all almond flour. I think I'll try it that way one time out of curiosity, just to see how the texture changes (or doesn't).

Char, you could always use the pabn to make any variety of giant cookies. I'll bet my Almond Butter Cookie dough is pliable enough to press into a pan like this, and THAT dough is so versatile every type of cookie I make with it comes out GREAT and consistently firm and slightly chewy. And a bigfoot Focaccia sheet bread! Or a giant baked pancake! I'll stop now. LOL

I have the cookie pan and you can use any cookie recipe to fill it and I have . But I want to make this one with lemon sauce on top.
