I've not made mozz, but I've made Indian paneer a couple of times with good success.

It's not hard as long as you follow the "rules" - I make it whenever I make butter chicken. I then cube it up and simmer it in some of the same sauce, adding a few peas to it. DH adores it!

YouTube has alot of easy cheese recipes. They got a farmers cheese that is really easy that i have been wanting to make.

I have made mozerella and then ricotta with the leftover whey. Very easy and GOOD!
