Doritos, Brownies, and Pizza? Yes Please!
I just stumbled upon this list of LC recipes that sound heavenly. I'm sitting here drooling, trying to decide which to try first
1 large zucchini, shredded
2 cups cheese
Preheat oven to 450 degrees F.
Grease 2 cookie sheets.
Cut ends from zucchini. Shred. Mix with egg and cheese. Make 6-8” circles on greased cookie sheet(s). Bake at 450 degrees for 12 minutes. Loosen and flip the circles.
Bake for another 5 minutes at 450 degrees.
With a pizza cutter, cut rounds into triangles (about 6 per round).
Let cool on a rack for 6-8 hours in a cool oven.
To store, keep loosely in a bag or a plastic container in the refrigerator or on the counter. Best used within a week of preparation.
After chips have dried substantially, in a plastic container toss with popcorn seasoning for desired flavor.
Makes 36 chips.

2 ounces unsweetened chocolate
1 cup butter
1 1/2 cups Splenda sugar substitute
4 eggs, large
4 egg yolks, large
1 tablespoon vanilla
6 tablespoons cocoa
Preheat the oven to 350 degrees.
Melt the chocolate and butter together on stovetop or in microwave.
Add the splenda, eggs, egg yolks, vanilla and cocoa, stirring until well blended.
Pour into a 9 X 13 inch pan (spray with vegetable spray and dust with cocoa).
Bake at 350 degrees for 50 minutes.
1 (8 oz.) package of full fat cream cheese (room temp.)
Freshly ground black pepper
1/4 cup grated parmesan cheese
A pinch of cayenne pepper
1/2 teaspoon oregano
1 cup shredded mozzarella cheese
Preheat oven to 350.
Butter a 9×13 baking dish
Blend cream cheese and eggs and season with pepper & garlic powder
Add parmesan cheese and stir until combined
Pour into buttered baking dish
Bake for 17 minutes or until golden brown
Let crust cool for 10 minutes before adding toppings
After crust is cooked, raise oven to 400 degrees
Mix together marinara sauce, garlic powder, cayenne pepper & oregano
Top crust with marinara and spread evenly
Top with mozzarella cheese
Bake for 8 minutes or until cheese is bubbly

I make my own "Doritos" by sprinkling plain pork rinds with nacho cheese flavored Kernel Season's powder. I sprinkle the powder into the container of pork rinds, put the lid on it and shake well until they're well coated. I wonder why no company has ever thought of making nacho cheese flavored pork rinds. It seems a logical flavor choice.
