Callebaut Mycryo?

While searching the web for some info on cooking with cocoa butter I ran upon a discussion regarding a product called Mycryo that is manufactured by Callebaut. I went to the website and found that it is a powdered cocoa butter and and it shows where you can dredge a piece of meat in it and fry it in a skillet with no additional oil. There are also some Youtube videos about it but I haven't watched any of those. It can also be used in other applications including tempering chocolate.

I was curious about it so I found a supplier in Oregon and ordered some to try.


Anybody have an experience with it?

eh, I started to read and the line about it being a "noble fat, entirely vegetable" made me think they are being dishonest in principle if not fact. it's saturated and to imply it's better because it's vegetable is begging the issue of healthy vs. unhealthy fats.

I think saturated fat is great, don't get me wrong...

also, how is this better than just using regular coconut oil? if it's all fat, it will immediately melt upon being heated and behave just like the other, right?

My Mycryo came in today. Looks interesting, the taste is similar to the cocoa butter I order in chunks that I use to make chocolate but it doesn't have as strong a chocolate undertone.

Can't wait to try it.


Plus they also sent a chocolate taped to a business card, LOL.
