Peanut Butter Cups in Mold *pic*













Chocolate
2 tablespoons unsalted butter, melted in microwave for about 20 seconds.
(melted with a few lumps left in it...when stirred lumps should disappear)
2 blue (Equal) packages of sweetener
1 teaspoon cocoa
1 teaspoon heavy cream

Stir until it starts to thicken. Add 1/2 mixture to mold, freeze for a few minutes till it firm.

Peanut Butter Cream
2 tablespoon peanut butter
1 tablespoon heavy cream
2 packages of Splenda

Mix together and then spread on bottom layer of chocolate. Pour remaining chocolate over the top and freeze for 1 hour or more.

* This time I added chopped walnuts to the chocolate mixture.

That looks so charming. I have star, pumpkins, and tree silicone molds.I've done this with them. I'm getting ready to make some peanutbutter cups too. I use coconut milk.

Yes sorta of... I'm making it today. So I'lll write down the recipe and take pics for ya. Yours looks so cute.

I love milk chocolate and I started playing to see if I could make a milk chocolate with no dairy.

OK Young lady I have it.

Essy's milk chocolate candy

1 can coconut milk ( highest fat )
4 squares of 1oo% cocoa bar 2 oz.just melted
1/4 c. + 1 T. Xylitol powdered ( I used it 'cause all I had.)
1/8 tsp. Ezsweet
2 packets sweet one


Now you mix this all up really well.

I used this to make bars and peanutbutter cups.
Here are the peanutbutter cups as stars and pumpkins.

I think they are great. You can use Eyrithitol in this. I used what I had.
I love it.


MM you can use equal if you want. I know how hard it is to get things on the East Coast.

Rosethorn, I will be going to the supermarket in a few day so I will pick up some coconut milk and give it a try!! Just one question, does it have a coconut taste?

Ohhh Yeah I made a batch of my chocolate and covered walnuts stirring them until coated then I froze them......... Outta this world I am going to try peanuts and almonds next time...

I have eyrithitol(not powdered) but can't seem to get the measurment correct.. Also I heard that it cyrstalizes?? Any thoughts on this? I am very leary of using the "blue" packettes but I don't eat a lot of it soooo.. I use it

Drj you noticed before I did!!!!!!

MM I use Xylitol because it was given to me and I like it. You want to get it to the sweetness you want.

Great on the nuts.

mmoris I made your peanut butter cup this morning! I wanted something high fat for breakfast and I'm all out of eggs and sausage so this hit the spot. I used powdered saccharin sweetener because that's what I had. Ah-mazing! Thanks!

Edit to add: All I had was a 1-cup round pyrex dish, but I'm going to look for silicone molds when I go grocery shopping today. So cute! My daughter would love these but she's 6, so I may try to find some smaller molds so I can make 2 out of the one serving

Thanks mamabear Yesterday I made just the peanut butter portion and froze for a few hours and it was so yummy!

I purchase my holiday silicon molds after the season has passed and get them for the a fraction of the cost or purchase on Ebay.
Before I found my pumpkin molds I would line a small pan with parchment paper and make them like chocolate-peanut butter bars.

Mamabear check out your dollar stores if you have any. I get some really cute silicone stuff there. And they have shaped ice cube trays.

I have stars, hearts, 4" tubes, in ice cube trays .
hearts,pumpkins, santa clauses, trees, eggs in silicone .
And I also buy them at the end of the holiday.

I use all of these to mold my candy.

Thanks for the suggestions on where to find molds, I couldn't find any at our local wal-mart! Weird! I'll be on the lookout next time I go shopping. I think there might be a Marshall's around here, and for sure we have a Dollar Store. I'd love to have silicone ice cube trays. Ours are junky plastic and my husband gets mad every time he has to use them because the ice wont come out!

I got 3 yesterday at goodwill for .69. I use cute ice cube trays for my candies. I should take a pic. The ones I got yesterday , I thought were regular ice trays . No when I got home they were silicone. WOW so cool. Check habitat for humanity too.

I went back and re-read the thread and realized I was getting the 2 chocolate recipes mixed up. Yours uses cocoa and Essey's uses the chocolate bar. Whoops!
