These sound good for a meal and with such high fat, they will probably stay with a person.
I hear you about losing and gaining. I have done that all of my life, but am hoping this time, I can keep it off for good.

Just made some lemon bombs with coconut extract instead of lemon extract. I put a cocoa roasted almond on each bomb and sprinkled chia seeds on top. Tastes like cheescake Yummmm

I make curried fat bombs...

Coconut oil, tahini, sesame seeds, curry powder, salt...PB or peanut flour if you have it.

Very good melted over a stir-fry or shirataki noodles, like a quick peanut sauce.

Next time I will use SF chocolate chips, coconut shreds and pecan chips as the add ins. I love that combo!!!!
Aren't craisins sugary? For that matter, raisins? Just wondering if it's low carb friendly. Can I find coconut butter and chocolate almond butter at Walmart? Thanks!

Craisins are sugary, but didn't matter to me. The amount that I use it is no big deal. I got them because they were a crazy good price and I love them on salads. They don't derail my weight loss. I found the chocolate almond butter at Publix. But Walmart may have it. I have seen maple almond butter at my Walmart this weekend. I get my coconut butter from Tropical Traditions online. I have never seen it at Walmart, but know that my local health food store carries it. Artisana is the brand I have seen there.

I'll check my health food store if not walmart. Do you use coconut butter instead of coconut oil, or both? I've heard the taste takes getting used to...started to buy coconut oil at the grocery store but it was $15.00! Is that normal?

I had some coconut butter to use up, so I used it!! I personally like it better than straight oil. The oil is well, oily The coconut butter is more sturdy than runny, KWIM? The standard price for virgin coconut oil is about that much. That is the one that tastes like coconuts and better for you than the refined kind. Was it the Nutiva brand? I find that at my local Walmart. I don't recall if I used coconut oil in the fat bombs, or just the coconut butter. So right now I really cannot say which one is better, but the version I made up above was awesome

I'm making these today, and I have no idea how much sweetener to use, since I find everything sweet now, and have never tried them before! But, we'll see, I'm sure I'll still eat them even if they're not sweet, and I can always melt them down and add more I guess. Love the thought of this recipe!

Lemon Fat Bomb

1 ounce cream cheese, room temp.
2 tablespoons butter, room temp.
2 tablespoons coconut oil
1 tablespoon sour cream
2 teaspoons lemon juice
1/8 teaspoon lemon extract
sweetener to taste

Stir together the cream cheese and butter. Add the remaining ingredients and stir until smooth. Refrigerate until it stiffens up. If you are the impatient type, freeze for 20 minutes before eating.

I would use the same amount as in cream cheese clouds. I think it is 1/4 cup. If that seems like too much to you, I guess u can add to taste.

Wait!! I just realized the lemon bomb recipe is one serving!! Probably a teaspoon then...Tbsp?

Mix it all up and you have some delicious fat bombs!
I just made this one. These are my first fat bombs and I think they came out great. I used one cup of the unsweetened coconut and a half cup of chopped pecans. The chocolate that I bought was unsweetened so I upped the syrup to 8 Tbs.

I think it was pretty good. At first I thought it wasn't sweet enough, but after thinking about it, I thought it was good as-is because one piece was satisfying.

Thanks so much to everyone for sharing their recipes! I'm trying to stay away from sugar alcohols for a few weeks and think that fat bombs may give me my sweet treat without any sugar alcohols.

Here's my recipe:

1 or 2 oz of cream cheese, softened
1 Tbsp coconut oil
1 drop EZ sweet
1/2 tsp cocoa powder
Stir and enjoy. I don't usually make it to the freezer, just eat it as my nightly snack. I have also used a Tbsp of peanut butter instead of or in addition to the cocoa powder. Not quite as high in fat as those above but then, one could add butter or up the coconut oil.

YUM!

Yes, the first taste you notice is the coconut. Texture is different, more like a chocolate bar, but I loved the coconut taste. Had my hubby taste it too, and he said it was like an Almond Joy. Didn't really taste the almond butter at all.

The fat bombs I made were:

Almond Butter
Coconut Oil
Unsweetened Coconut
Almond Chunks
Hersheys Sugar Free Syrup
Liquid Splenda

Melted the first 2 ingredients together in microwave
Added the rest of ingredients - mixed it al together
Spread on wax paper - put in freezer until solid

I ended up making these and they really are yummy! I put a few pecans into 6 or so cupcake cups, pouring the chocolate over them, freezing them and serving w/ a slather of PB on top. They are indeed a bit bitter as some of the reviews indicate, but hey, it's unsweetened chocolate. I may try almond or orange extract next time.

I make them in a mini muffin pan. 1 Tablespoon fits in each mini muffin space and they pop right out after cooling for 30-60 minutes in the fridge. Then I put them in another container.

I made a filling for the chocolate fat bombs. Pureed some dates with SF caramel syrup and peanut butter. Put a blob in the middle of the fat bomb and topped with peanuts. taste kind of like a snickers;o)
