Cinnamon Crumb Top Coffee Cake

I baked Ginny Larsen's Cinnamon Crumb Top Coffee Cake and it is delicious. I added about 1/4 cup toasted pecans to the topping before I baked it, and added 1 tsp. vanilla to batter and reduced the salt to 1/2 tsp. in batter (as everyone seems interested in our tweaks!)

If you think you will be removing from the pan, I strongly suggest lining the bottom of the pan with parchment paper.

I can hardly wait to enjoy this for snacks and with breakfast.

Mmmm - that looks good! I've looked at the recipe a couple times but haven't made it yet. After you've cut into it would you post your opinion of the texture and flavor, please.

I made Carolyn Ketchum's Peanut Flour Chicken Strips today. I added 1/4 tsp. cayenne pepper and 1/2 tsp. poultry seasoning to the flour mixture. I used peanut oil to cook them -- they came out great!

The recipe is on page 158 of Vol. 1.

After posting I noticed this is the thread for Vol. 2, sorry, I'll make a duplicate post in the Vol. 1 thread.

Jen - I made your spiced pecan clusters on page 43 today. They are yummy! Of course, living up to my name - did just a minor tweak, used E-Z sweet (12 drops) rather than Splenda and added some ginger also. I fear I could eat the whole batch in 2 days; you say 8 servings - I'm really going to try to make them last that long!

I love those spiced pecan clusters too, Tweaker. I used to make them to put in pretty tins under the Christmas tree. My guys loved them. I also occasionally made them for other people as a gift.

Yes, you all guessed it!! It's being printed early January but for a brief week or so the price is really good right now and not too many people know that. I'm very excited - this is a lovely cookbook! We have a whole low-carb friends' section again and some new faces among the authors.

Help! I am trying to order this, found a link through Ginny's Low Carb Kitchen, was all the way through but then it tells me what I am going to order. It says, "Perfect Bound". I really, really want coil bound. Did not see that as an option, only "click here". How can I pre-order one coiled bound book? And what is perfect bound? Thank you for your help. Have both other books and well used, can't wait to see this one!

Tilly, glad you found your way. lol (did update the blog after you pointed it out) This cookbook has amazing recipes. When I was editing, I really wanted to get up at times and head for the kitchen; so tempting! Kyndra Holley has restaurant-style recipes. Carolyn Ketchum is back! So is Kent Altena! Vanessa Romero - dairy-free recipes! Judy Barnes Baker (author of Carb Wars and Nourished) - a gourmet cook! I have a full section (over 60 recipes) this time. And, of course, the Low-carb friends' section is there again with favorite recipes from people like Dottie, Barbo and Char, Tweaker and many others. The doctors (Dr. Su and Dr. Parker) are contributing awesome articles and we have a new contributing guest coach - Tom Nikkola, Vanessa's husband. Tom is now the Senior Director of Nutrition and Weight Management for Life Time Fitness, which is a large chain of health & fitness clubs in the States.

There is a lot of support for the cookbooks, ability to chat to the authors and ask questions, not the least of which is lowcarbfriends.com where we are kindly allowed one or two threads that are cookbook-related. I see they have allowed it for another related cookbook. Cool. It's a big concession from Admin and I am very grateful, as we can chat more easily here as friends than on Facebook even - or on our blogs. This forum is a great forum for low-carbers from that point of view as well. Everyone has their niche and lowcarbfriends.com continues to be important in that capacity as well as in other ways. Netrition.com is the best low-carb online store bar none, in my opinion.

Yes, thank you for allowing us to discuss the cookbook recipes AND can't wait to order mine. (Waiting to see if my girls are going to give me this for Christmas, because if they are not, then I will be giving it to myself!)

Thanks for doing this huge undertaking, Jennifer!!! It is MUCH appreciated and for all that contributed, thank you for sharing your expertise. Without which, I'm sure I would be right back where I started from and more (weight-wise).
